A deliciously fragrant Indian mulligatawny soup maker recipe made of carrots, onions, celery and apple. It's also healthy and cooked with orzo pasta for ease.

Only yesterday, Patricia, a member of my I LOVE SW Soup Facebook group, asked if there were a Mulligatawny soup maker recipe. (You are all welcome to join by the way!)
It didn't take me long until I had a hankering for a subtle sweet warming curry flavour in a soup.
And that's exactly what this Mulligatawny soup offers. But, as always, I made it my mission to make it soup maker friendly. *Affiliate link.

Do I Need a Soup Maker?
Please note, it is absolutely not necessary to use a soup maker for this mulligatawny soup. But the reason I create my soup recipes for my machine is because that you can't just follow any recipe and hope for the best.
Soup makers have a minimum and maximum limit, usually between 1300-1600ml. If you go under of over this limit, it has a sensor and it will not work.
Also, once you get to know it, you'll find too much of an ingredient can catch at the bottom and burn. If you ever need to clean burnt food at the bottom, then I recommend following these instructions.

How Healthy is This Mulligatawny Soup Maker Recipe?
This mulligatawny soup recipe is very healthy as it uses so little oil or fat. But, as the apples cook in the soup, releasing the sugars, it is slightly sinful with Slimming clubs.
However, at only 140 calories per portion, there's very little to worry about! That is, providing you're only sauteing your veggies with Frylight or similar.

Alternative Methods for Cooking This Mulligatawny Soup Recipe
For Pans:
- Follow the sauteing process as per the instructions. Then add everything else and simmer for 20-25 minutes.
For Slow Cookers:
- Saute the vegetables as above. Then add to the slow cooker and everything else, except the orzo and cook HIGH for 3-4 hours, or LOW for 6-7 hours. Add the orzo during the last half hour of cooking.
Multicookers:
- Follow the sauteing process as per the instructions. Then add everything else and cook on a pressure setting for around 5 minutes. Or you could follow the pan instructions and cook without the lid closed.

Can I Freeze This Mulligatawny Soup Maker Recipe?
Yes, you can freeze this mulligatawny soup make recipe. I like to store them in Sistema containers, too. But you can buy copy cat versions from pound shops, these days.
I try to eat them within two months and defrost either in the fridge overnight or with my oven or microwave's defrost setting. And ensure heating through thoroughly before enjoying.
However, I do recommend labelling your soups before freezing. Speaking from experience, I've often forgot what I've stored away until I've started eating it again.

Slimmer's Mulligatawny Soup Maker Recipe
Equipment
Ingredients
- Frylight
- 1 carrot peeled and diced
- 1 onion peeled and diced
- 1 litre water
- 2 sticks celery diced
- 2 cloves garlic minced
- 1 small apple cored and diced (peeled is optional)
- 2 cm fresh ginger grated
- 1 tablespoon medium curry powder
- 2 bay leaves
- 3 stock cubes flavour of your choice, or 2 stockpots
- 80 g orzo
- Sprinkle nutmeg
- Seasoning
- 1 tablespoon tomato puree
To Thicken After if Desired, Either:
- 10 g instant mash
- ⅛ teaspoon Xanthan Gum mixed with cold water or cornflour
Instructions
- Spray a large pan with Frylight and saute all of the veg until the onions have softened on medium to low heat for 10 minutes.
- Chuck everything into your soup maker except anything to thicken and set on chunky. For pans, etc, see the notes above in the post.
- Stir in something to thicken if desired, although, remember, orzo likes to soak up juices and thicken very quickly after cooking.
