While I've been baking while staying at home, recently, I made some absolutely scrumptious buckwheat banana muffins and oat flour banana bread.
In that recipe, I also answered, What Is Buckwheat Flour? And talked about how buckwheat flour isn't really a grain, making it Gluten Free and suitable for coeliacs. And the results? I found it created the best banana bread recipe, EVER. So much so, my dog is always by my side hanging around for crumbs.
It's rich, naturally sweet and I love its golden colour. Although, unlike many buckwheat banana recipes online, this isn't Vegan buckwheat banana bread. But that's one to develop for another day!

How to Make Buckwheat Bread With Bananas

- Preheat your oven at 160c fan / 180c conventional / gas mark 4 / 350F.
- Butter and line a 2lb loaf tin with a loaf liner or baking paper.
- Now cream the sugar, honey and butter with an electric mixer until light and fluffy.
- Slowly whisk in the eggs, one at a time.
- Gently fold in the flour, baking powder and mashed bananas, but don't over mix.
- Transfer to the buckwheat banana batter into the lined tin and bake for 50 minutes to 1 hour.
- Test the loaf with a cake skewer to see if it comes out clean.
- Remove from the oven and cool for 10 minutes, then carefully turn out to place on a cooling rack.

Tips for Baking Banana Buckwheat Bread
I had a couple of disasters when I first made a banana bread buckwheat flour recipe, which I'd like to share.
- The flour, sugar and butter ratio is typical of a buckwheat sponge cake, making it light and fluffy, so don't add any heavy toppings, like raw banana BEFORE it goes in the oven, otherwise, it will sink. Add it at the end, instead.
- Don't increase the baking powder to help it rise more. I've found that 2.5 teaspoon to around 1 cup (150g), is the sweet spot.

Other Ideas
Some bakers think that you shouldn't substitute a non-gluten free flour entirely with one that is, such as buckwheat or oat flour in case it falls apart. For example, some only use 25% gluten free flour, which can create a softer bake, but it is then no longer Gluten Free.
Thankfully, this Gluten free banana bread made with buckwheat flour doesn't do that. However, this is where you may want to try add ¼ teaspoon of Xanthan gum, although I didn't feel like it needed it.

Does Banana Bread Need to be Stored in the Fridge?
To store this banana bread buckwheat recipe, I recommend storing it at room temperature for up to 5 days in an air-tight container, lined with kitchen paper.
Storing buckwheat banana cake or bread in the fridge can change the texture, making it denser. This is especially true if left exposed in the fridge.

How to Freeze Banana Bread
It's very easy to store banana buckwheat honey bread in the freezer. Again, I recommend an airtight container and freeze for up to 3 months.
I recommend slicing it up first, separating each sheet with baking paper, and storing them in a freezer-safe air-tight container.
That way, you can take out a slice to defrost as and when and not feel forced to indulge in a short period of time.

Buckwheat Banana Bread
Equipment
Ingredients
- 150 g Buckwheat flour (1 cup + 3 tbsp)
- 150 g unsalted butter (⅔ cups + 1 tbsp)
- 150 g golden caster sugar (¾ cups + 2 tbsp)
- 2.5 teaspoon baking powder
- 2 large eggs
- 2 bananas mashed (*Approx 190g in weight)
- 1 tablespoon honey
- 2 teaspoon ground cinnamon
Icing Sugar Drizzle
- 50 g icing sugar (5 tbsp)
- 1 tablespoon water
- 12 banana chips *I used dehydrated banana chips
Instructions
- Preheat your oven at 160c fan / 180c conventional / gas mark 4 / 350F.
- Butter and line a 2lb loaf tin with a loaf liner or baking paper.
- Now cream the sugar, honey and butter with an electric mixer until light and fluffy.
