This is an easy chicken soup made in a soup maker and is full of flavour without the need to handle chicken bones! I'll also show you how to make it healthy, on the stovetop, slow cooker or Instant Pot.

This unofficial Slimming World chicken soup was a much-requested recipe. And let me tell you, it's utterly delicious! Once you make this, you will honestly turn your nose up at any canned soup.
There are no artificial colours or flavours - just simple ingredients for a good wholesome chicken soup that go great with buttered crusty bread.
I tend to make a bowl of this comforting soup when I'm feeling under the weather. But the great thing is, it's equally as soothing any time of the year however you're feeling.

🛒 Ingredient Notes

Oil spray - we use low calorie cooking oil spray low fat, but you can use olive oil if preferred
Chicken breasts - these are skinless and boneless for ease and cut into bite-size pieces
Potatoes - peeled & diced to naturally thicken the soup
Onion - for a warming, sweet flavour
Leeks - for flavour, but the white parts especially give a creamier texture
Carrot - adds sweetness and vitamins
Celery - for flavour and bulks up the soup
Milk - for a lighter colour and add a subtle creaminess
Chicken stock - this can be made up with hot water and stock cubes or stock pots, or use homemade chicken broth
Thyme - fresh or dried is fine for a delicious herby taste
Seasoning - this is a pinch of sea salt and ground black pepper
Yogurt - we use fat free natural yogurt at room temperature to stir in at the end, but you could use cream cheese, creme fraiche, etc
📋 Instructions

1. Spray a large frying pan (or sauce pan for stoves) with cooking oil spray and saute the onions until softened. Then add diced chicken and sear until golden brown.

2. Add all of the vegetables, herbs, spices, and seasoning, then continue to sauté for about 10 minutes, stirring occasionally.
If you have a lid, cover it and let everything sweat.

3. Transfer the chicken and veg mixture into a soup maker along with add everything else.
Stove tops: add everything and simmer for 22-25 minutes.

4. Now set your soup maker to smooth setting or chunky if preferred and stir in the yogurt once cooked.
Stove tops: Blend with an immersion blender at the end.
Tip: if you prefer a semi-chunky soup, then just select a simple cooking mode, such as chunky and blend half of it manually at the end.

Depending on your dietary needs, here are a few simple swaps you can make:
- Oil spray - if you prefer not to make it an unofficial Slimming World chicken soup, you can fry the vegetables in oil
- Keto diet - swap oil spray for olive oil and use cauliflower instead of potato
- Gluten Free - ensure you use GF stock
- Vegetarian - swap the chicken for Quorn chicken style pieces, bulk up the vegetables and make a chicken and mushroom soup, or add green beans, etc and use vegetable stock

⚖️ Variations
Why not choose an optional ingredient from the options below, to truly personalise this homemade soup maker recipe.
- Spicy - add chili flakes, black beans and cheese for some Tex-Mex heat
- Deluxe - Stir in some lemon juice to enhance the flavours, add a herb stock pot, fresh herbs and stir in some double cream and a knob of butter at the end
- Kid friendly - serve it in their favourite bowl with fun cookie cutter toast shapes or crumble some tortilla chips on top for a familiar crunch

If you don't have a soup maker, a large sauce pan, and a blender pitcher or similar is just as perfect!

❄️ Storage
Storing - we prefer eating chicken soup fresh, but it can be stored in an airtight container and refrigerated for up to 3 days.
Freezing - cool to room temperature and again, store in a freezer-safe container for up to 3 months.
Reheating - If you want to eat the next day, defrost in the fridge if required and microwave until piping hot, or on the hob or stove.

- If you're on a budget and want to spread this recipe further, you can serve it as 6 cups of soup as opposed to 4 bowls.
- For a semi chunky soup, just cook on chunky first, then either manually blend briefly, or half of the soup.
- Don't skip the sauteing as this creates a Malliard effect, making the ingredients sweeter and richer. Otherwise, add a pinch of sweetness at the end.

❓ FAQ
Sautéing onions, vegetables and chicken really does make a difference as it caramelises the flavours and tastes richer.
If you don't have time or can't be bothered (I have those days sometimes!), then add a small squirt of honey or sweetener at the end.
My version of chicken soup is very healthy! It works out around 201 calories per person and is full of vitamin A, C, and some calcium.
It's also estimated as Syn Free on Slimming World, based on you using a little bit of milk from your A allowance and using fat-free natural yogurt with water.
Yes, you can use shredded roast chicken instead, but you may need to add more chicken stock for extra flavour.
Soup maker manuals advise not to add raw meat to the pot as it doesn't get hot enough. So to ensure it is cooked through, I sear or cook any meat first.
For slow cookers, I would saute the meat and vegetables first, then add everything to your crockpot. Then cook on high heat for 3 to 4 hours, or low heat for 6 to 7 before blending.
After sautéing the veg and browning the chicken, transfer everything to your Instant Pot, Tefal Cook4Me, Ninja Foodie, etc and cook on pressure cooker mode for 10 minutes.

Creamy Chicken Soup Maker Recipe

- oil spray
- 250 g chicken breasts cut in to bite size pieces (About 2 chicken breasts
- 320 g potatoes peeled & diced (about 2 medium potatoes)
- 1 onion diced
- 235 g leeks sliced (about 2 leeks)
- 80 g carrot peeled & diced (about 1 large carrot)
- 70 g celery sliced (about 2 celery sticks)
- 150 ml skimmed milk *to be counted or used as your allowance
- 500 ml water
- 1 teaspoon dried thyme
- 2 chicken stock cubes or stock pots
- Seasoning
- 50 g fat free natural yogurt stir in at the end
Instructions
- Spray a pan with frylight & saute the onion and chicken on medium to low heat until onion is translucent.
- Now add all of the veg and thyme to the pan, season and spray with frylight again and put on a lid and continue to cook for 10mins - fry longer if the chicken is not cooked through.
- Add to the soup maker and add the water, milk and stock and set the soup maker to smooth.
- Once the soup maker has finished, add a good dollop of fat free fromage frais, natural yoghurt or quark and blend again, then it is ready to serve!
- If you want to store leftovers, then I am loving my new soup mugs that come with vented lids that are microwavable, freezeable & dishwasher safe!

What's the point in having a soup maker if you have to do all this other frying ingredients etc why not use already cooked chicken and just add all ingredients (except fried onions maybe)

It really is personal preference. Sauteing food does give a richer, sweeter and smoother taste but there is also a soup maker now with a saute option to cut down on washing up. Sometimes I saute, sometimes I don't, depending if I have the time.
