These leftover mashed potato muffins are soft, crumbly and low fat with a cheese and onion flavour. They can be Syn Free on Slimming World and make perfect savoury scones with butter or potato puffs as soup dippers!

It's all over the news that times will be financially challenging for everyone. So now more than ever, I'm sure many of us will be getting more creative with leftover food.
Take good old mashed potato, for example. Did you know it's great for a few recipes?

Unofficial Slimming World Cheese and Onion Muffins
Equipment
Ingredients
- Low calorie cooking oil spray
- 530 g leftover mashed potatoes (or 2 cups)
- 1 teaspoon mustard powder
- 1 teaspoon baking powder *to be counted or use as allowance
- 40 g blended oats *to be counted or use as allowance
- 1 egg
- 40 g low fat cheese grated *to be counted or use as allowance
- 1 onion diced & sauted
Instructions
- Preheat your oven at 200g
- Mix all of the ingredients together until combined.
- Spray and line a 12 muffin tin baking tray with cupcake cakes and spoon the potato mixture in to each hole.
- Sprinkle on top with a pinch of unblended oats, a pinch of chives and cheese if you wish.
- Bake in the oven for 35 minutes or until the tops have started to golden.
