Bored of leftover soup? Well, here's a cheap Slimming World meal you can make: a stack of healthy savoury pancakes made with oats blitzed into flour in a food processor. They're great with cheese, as roll-ups, or simply sliced and stirred into your next soup!

Whether you're looking to cut down on food waste, or even slip some more vegetables to create healthy pancakes for kids, these soup pancakes are a doddle to make with a food processor.
I love soup, and tend to make an entire batch for myself. But sometimes after the 2nd bowl, I feel I need variety.
Instead, what you can do is turn a portion of it into healthy savory pancakes, then slice them up and serve yourself a German style pancake soup! Or simply eat them for breakfast like a stack of potato cakes.

Savoury Pancakes from Leftover Soup
Ingredients
- Low calorie cooking oil spray
- 40 g basic porridge oats *to be counted or used as your allowance
- Pinch salt
- 180 g soup of your choice *may need to be counted
- 1 egg
Instructions
- In a food processor, blend the oats until fine, but if you're not following a diet plan, then plain flour is fine.
- Add a pinch of salt and 180g of leftover soup and blend.
- Crack in an egg and blend once more.
- Using a frying pan (the smaller the better), spray with oil spray, whack up the heat and spoon in 1 tablespoon at a time and cook each side for around 1-2 minutes.
