I had a weird idea on Monday morning; pancakes made out of leftover soup. Yes, bizarre I know, but it worked! I took on the syns as a challenge for the sake of an experiment (roughly about 10) and admittedly, not really worth it if you’re on a diet plan but I know a lot of readers make my soup recipes and may have leftovers to play with to feel a child or partners. You know, the culprits that pester you give in and syn for a takeaway. That’s my constant challenge any how!
But if you fancy trying to adapt it to a less floured version or even amalgamate it with my healthier verison, then please go ahead, I’m not stopping you and tell me how you did it in the comments below. There’s got to be a way, surely?
- 200g any smooth soup
- 50g self raising flour
- 1/2 tsp baking powder
- 1 egg

- In a large bowl, mix together all the ingredients except the frylight until fully combined.
- Spray a frying pan with frylight and whack up the heat (I used a 20cm diameter frying pan and got 5 pancakes).
- One the frylight is bubbling/sizzling, spoon in some mixture and fry both sides for 1 minute and repeat until you have a stack. (It’d be great if you could tag me on Instagram @TastefullyVikkie with a pic too if you make them!)
After taking a snap, I then gave them a cheeky sprinkling of cheese and a dash of sweet chilli (and then vowed to be very good every morning for the rest of the week and stick to my porridge).
