- Porridge oats - if using a food processor, you can use any size plain porridge oats, such as jumbo rolled oats. A good alternative is Ready Brek baked with milk instead of yogurt, but will be slightly denser. If you don't have a food processor, I recommend quick cook instant oats with yogurt
- Baking powder - to help it rise significantly more
- Egg - this helps bind while baking, otherwise it will take a lot longer to firm up
- Vanilla extract - or a drop of vanilla essence - you only need a small amount to taste it
- Sweetener - or omit if drizzling with maple syrup, honey, golden syrup at the end
- Fat free yogurt - this is a key ingredient for moist baked oats and has more calcium than full fat yogurts. It also helps it rise compared to swapping it with milk. Milk gives it a more eggy taste, although it does have a delicious homemade thick rice pudding taste to it
- Mixed berries - I prefer berries such as raspberries, blueberries, or strawberries for a low glycemic index and they burst into the mix for a tender cake texture (GI). Then top some uncooked ones on top with more yogurt and maple syrup
- Optional spices - such as a pinch of cinnamon, nutmegs, etc

📋 Instructions
Here are my simple step by step instructions on how to make baked oats the healthy way.

First, preheat your oven to gas mark 4/160c fan/180c/350F.
Then if preferred, you can mill the oats into flour with a food processor or stick blender.

Now mix all the wet ingredients together in a small oven proof dish or oven safe mug/cup.
(I use a Denby cup).

Now stir in the all of dry ingredients until smooth.

Gently stir in your fresh fruit - I use mixed blueberries and raspberries.
Then bake in the oven for 30 minutes.
Now serve your abked porridge oats with yogurt or cream, more berries, and a drizzle of maple syrup or honey.
Tip: if you don't have a food processor to mill your own oat flour for baked porridge, then you can use Ready Brek or quick cook oats instead. It won't rise as much, but it still tastes delicious.

👩🍳 Substitutions
Depending on your dietary needs, here are a few simple swaps you can make to this basic recipe:
- Oats - ensure you are using gluten free oats if needed. Or if following a low carb keto diet, a good choice is to use 4 tablespoon of almond flour (note: Slimming World fans can use almonds - but refer to your book or consultant as to how many you can as part of your healthy extra B choice).
- Fat free natural yogurt - if you don't have any fat free yogurt, you can mix milk half the amount of milk with ½ a banana. For dairy free - use coconut plant based yogurt or coconut milk, almond milk or soya. You can also swap for soya yoghut, etc.
- Egg - for a baked oats no egg version (vegan baked oats), swap the egg for ½ a mashed banana to thicken and bake for 30 minutes, but note that cooked fruit will require counting on a weight loss plan. You can also leave it out and mix it all together to make overnight oats by placing it in the fridge the night before and eating without baking.

Here are a few different ways you can personalise to find your next unofficial Slimming World favourite:
- Chocolate orange - add ½ tablespoon cocoa powder, or orange chocolate chips and orange zest
- Parsnip and carrot cake oats Slimming World - this is a really warming flavour with extra natural sweetness
- Deluxe - add seeds from a vanilla pod and serve with a splash of maple syrup

Storing - we prefer eating baked oatmeal straight out of the oven, but it can be stored in an airtight container or in the same dish, covered with foil and refrigerated for up to 3 days.
Freezing - cool to room temperature and again, store in a freezer safe container for up to 3 months.
Reheating - If you want to eat the next day, defrost in the fridge if required and microwave until piping hot, or in the oven for 10 minutes while covered with foil.

- If you want a baked oats cake texture, I recommend blending all of the ingredients in a food processor, but it's still delicious if you don't

Chocolate sauce - baked oats is always delicious with a low calorie chocolate sauce drizzled on top
Fresh fruit - for extra fibre and nutrition, unlike cooked fruit, it's delicious with fresh fruits like sliced bananas, berries, etc
Muller Light yogurt - the perfect way for an easy side is to enjoy baked oats with yogurt such as Muller Light fruity low sugar yoghurt. Theer are many delicious ones such as strawberry, toffee, coconut, vanilla with dark chocolate, etc
Lotus biscuits - crumble some biscoff biscuits on top of your breakfast oats along with a dollop of yogurt with fruit for a cheesecake taste
❓ FAQ
Baking powder isn't essential for this baked oats Slimming World recipe, but it does help increase the volume while baking and increases the syns.
I think baked oats are a great option for those wanting to maintain or lose weight as it's higher in fibre and is a complex carbohydrate, which is important that your metabolism.
However, it becomes less healthy when adding sugar, and fats that are empty calories with little to no nutritional value.
Ideally, you should aim for around a 2:1 ratio of liquid to oats, and too much can make them soggy. Another problem could be that you pre-soaked the oats first, or didn't bake them long enough.
Yes, these make great air fryer baked oats. Simply preheat at 180c/350F and bake for 8-10 minutes.
