This slimming burger tray bake is the perfect family fakeaway if you're short of time! With minimal prep, this layered potato, onion and burger creates a juicy and delicious meal. And it's all baked together, saving you time!
This post is sponsored by Tesco Jersey Royal New Potatoes.

A few weeks ago, I created this homemade beef burger tray bake recipe on a whim because I was really short of time. To me, it's like a fakeaway burger meal, but much easier and uses healthy, lean ingredients.
Also, what I loved about it was how the beef burger juices had ran in to the sliced potatoes. They were deliciously tender and juicy, making it a great alternative to a hash brown or a side of fries.
It can also be eaten with or without a 60g wholemeal bread roll. If you refer to the Slimming World app, you can find out which ones to eat as your allowance. Otherwise, you may have to count it and the same goes for the cheese you use.

USING TESCO JERSEY ROYAL NEW POTATOES INSTEAD OF FRIES
To save time, I used Tesco Jersey Royal Potatoes which are now available in Tesco until July. I particularly love them for this recipe because they require very little prep.
I just give them a rinse under cold water, then thickly slice and layer in a large roasting dish. And what you'll find is while the beef burgers and onions cook on top, the potatoes soak up the extra flavours.
They're also exclusively grown in Jersey and have an earthy, nutty taste. Furthermore, their arrival is usually a traditional sign that Spring is finally here! Note: you may also like my last season's Fruity Jersey Royal Potato Salad here.

HOW TO MAKE THIS EASY POTATO & BURGER TRAY BAKE
INGREDIENTS FOR 4 SERVINGS
- Low calorie cooking oil spray
- 900g Tesco Jersey Royal Potatoes
- Sprinkle of salt
- 750g extra lean 5% fat mince meat
- 2 onions (1 sliced, the other diced)
- 1 garlic clove, minced
- 4 lower fat cheese slices (using part of your 40g per person Healthy Extra A allowance)
- 1 red pepper, sliced
- Lettuce
- 4 x 60g wholemeal rolls (1 per person's Healthy Extra B allowance)
INSTRUCTIONS
Firstly, preheat the oven to 190 °C degrees. Meanwhile, rinse the Tesco Jersey Royal Potatoes under a cold tap.

Then slice them about 0.5cm thick.

And after spraying a large roasting dish with cooking oil spray, layer the potatoes along the bottom.
It doesn't matter if there's two to three layer; they'll still cook through.

Now spray again with low calorie cooking oil spray, followed by a good sprinkling of salt.

Top with sliced onions as evenly as possible and set aside for a minute to make the slimming burger mix.

MAKING HOMEMADE BEEF BURGERS
To turn this recipe into a lean burger tray bake, simply place the mincemeat in a large mixing bowl.
Then mix in the onion, garlic, and any seasoning you wish and flatten with the back of a spoon.
Now divide in quarters with a carving knife.

Roll each quarter in to a ball using your hands.

Then flatten into a burger pattie.

Place the burgers on top of the sliced potatoes and bake in the oven for 30 minutes.
Note, this would also work great with lean, healthy sausages too!

Once baked, double check to see if the potatoes are cooked by pricking them with a knife. If not, just give them an extra 5 to 10 minutes.
Then place cheese slices on top and bake for a final 5 minutes if you want to speed up the cheese melting process.

BURGER TRAY BAKE SERVING SUGGESTION
When we first ate ours a few weeks back, we simply ate it as it came in the tray and some salad.
However, the baked potato and onion slices make a great alternative for hash browns.
And of course, in 60g wholemeal rolls topped with salad and red pepper slices for extra sweetness.

CAN YOU FREEZE THESE BURGERS?
Yes, you can freeze this Burger Tray Bake, but ensure you don't place the cheese on top.
Simply place everything in freezeable containers after cooking and store for up to two to three months. Then defrost in the fridge and reheat in the oven for the same length of time, but covered with tin foil.
If stored in the fridge, keep it in an air-tight container for up to five days, then fully reheat it in the oven.
