This easy chunky cheese and tomato soup is Vegan, low carb and really delicious! It uses fresh tomatoes, but can also be made with tinned chopped tomatoes and doesn't need much time or washing up!

And today, I'm adding this easy Vegan fresh tomato soup to my list because it's ready in minutes and doesn't require a blender or much washing up.
You'll also find a longer way to cook it here, which is essentially a roasted chunky tomato soup or smooth, with a naturally rich and sweeter taste. Or, alternatively, you might enjoy this even quicker unofficial Slimming World tomato soup, Heinz style.

Jump to RecipeBut, in a nutshell, here's how I made it. Note, if you don't have time for skinning the tomatoes, you can use 2 tins of chopped tomatoes instead!
- Use the boiled stock water to skin the tomatoes. *I recommend pricking the tomatoes first and placing them in the freshly boiled water for about a minute or until the skins start to separate.
- Remove the toms with a slotted spoon and don't discard the water.
- Run the tomatoes until cold water so you can peel off the skins and set the tomatoes aside.
- In a large saucepan, saute the onions in oil and seasoning, along with any spices you wish, until softened.
- Add the tomatoes and press with a masher until you get bite sized pieces.
- Stir in everything else except the vegan cheese and simmer for about 10 minutes.
- Add the grated cheese and basil and stir and simmer until melted before serving.

Make it a Tomato & Aloe Vera Soup
Another addition I've also added in the past is the flesh of two Aloe Vera plant stalks. I've found it's a zero-carb thickening agent and is said to be beneficial for digestion problems, such as IBS. This is a much cheaper alternative than buying Aloe Vera juice.

Easy Chunky Tomato Soup Recipe With Vegan Cheese
Equipment
Ingredients
- 800 g tomatoes (Approx 16 tomatoes), skinned
- 800 ml boiling water
- 2 tablespoon rapeseed oil
- Dash Salt
- Dash Black pepper
- ⅓ cup tomato puree
- 2 vegan stock cubes Or 2 tablespoon vegan bouillon
- 1 tablespoon balsamic vinegar
- 200 g vegan cheese grated
- 1 tablespoon basil
- 1 onion diced
- ½ tablespoon chilli powder (Optional) or coarse red pepper powder
Instructions
- Prick the tomatoes and place in freshly boiled water and leave for the minute, before scooping out and peeling off the skins and set aside. (Keep the boiling water for your stock).
- Meanwhile, in a large saucepan, add the rapeseed oil, diced onions and salt and pepper and saute until softened.
- Add the tomatoes and press with a potato masher to create a pulp, then stir well.
- Place in the tomato puree and stock before simmering for about 10 minutes.
- Stir in the grated vegan cheese and basil until melted and serve.
