Corned Beef Curry Recipe (Thai Keto)
Equipment
Ingredients
- 1 tablespoon coconut oil
- ½ red onion sliced
- 1 tablespoon ginger freshly grated
- 1 clove garlic minced
- 1 red chilli chopped
- 2 tablespoon curry powder
- 340 g corned beef diced
- 1.5 courgettes (zucchini) diced
- 160 g curly kale 1 full bag from a UK supermarket
- 400 g coconut milk
Garnish
- 1 lime juice only
- 1 tablespoon sesame seed oil
Instructions
- Fry the onions, garlic, ginger and chilli with coconut oil until softened in a large deep frying pan.
- Stir in the curry powder, chopped corned beef and courgettes, then fry for a further 3-4 minutes or until the courgettes have mostly softened.
- Now add the kale and gently fry while covered to retain any moisture until tender. This should take about 3-5 minutes.
- Stir in the coconut milk until heated through.
- Add the garnish ingredients and serve with your favourite keto side.
