This keto sausage, aubergine and halloumi curry recipe a favourite meal of mine as it is packed with tender chunks of sausage, crispy halloumi, and spinach, all simmered in a rich and spicy sauce.
It's a breeze to make in your slow cooker. Just throw everything in and let it cook while you go about your day. You'll come home to a delicious and satisfying dinner that will warm you up from the inside out.

Coconut oil - or olive oil to sear the sausage meat and prevent it from completely disintegrating in the curry gravy
Onion - halved and sliced. This can be red or brown onions, or use store cupboard essentials like onion powder
Pork sausages - skins removed and broken up into bite-sized pieces to make the meat spread a little further on a budget. Or you could support your local butchers and ask for skinless or sausage meat. Alternatively, you could making a mild mince curry
Aubergines (eggplants) - this bulky fruit plumps up the curried sausages while also offering fibre and antioxidants such as vitamin B, C a such as potassium, manganese and folate. However, as it is part of the nightshade family, there is a debate that it can aggravate arthritic inflammation.
Tikka paste - this isn't always available in local supermarkets, so you may want to swap for harissa paste, red Thai curry paste, etc
Curry powder - you can use mild or medium curry powder in this recipe for curried sausages, or a mix of garam masala, cinnamon, cumin powder, etc
Ground ginger - or pan fry freshly grated ginger while sauteing the garlic and onions
Chilli flakes - (optional) or a sliced fresh chilli to add extra heat to the dish
Tinned tomatoes - for a tomato-based curry, or simply make an 80s retro curry gravy by using 2 tablespoon of plain flour and 300ml (1 & ¼ cups) of vegetable broth or beef stock to thicken to serve with mashed potatoes
Tomato puree - (tomato paste) this is concentrated tomato sauce
Spinach - to wilt in the pot during the last half hour for extra texture, colour and vitamins
Halloumi - diced and pan fried to add some delightful crispy bites
Lemon juice - to add some acidity to the dish and enhance the flavours
Full-fat coconut milk - for the best creamy flavour, or use double cream, Greek yoghurt, crème fraiche, etc
📋 Instructions

First, add oil to a large skillet.
Then remove the skins from the sausages and place them in the pan to sear, while breaking them up with a wooden spoon.

Now add the onions and garlic and saute until softened.
You may wish to drain any excess fat once done.

Transfer the cooked sausage meat, onions and garlic into your crockpot.
Then add the rest of the ingredients except the coconut milk, lemon juice, spinach and halloumi.
Stir well until everything is coated.

Cover and choose a cooking time:
- High heat = 3-4 hours
- Low heat = 6-7 hours or overnight

Once cooked, increase your setting to high heat if not on it already.
Stir in the lemon juice, coconut milk and spinach.
Then stir and cover and leave the spinach to wilt while you do the final step.

Meanwhile, heat oil again in a pan and fry the cubed halloumi cheese for 3-5 minutes while constantly turning.
The diced halloumi should e golden and crispy.
Now serve the curry with your favourite side and add the halloumi on top.
Tip: if you haven't used tikka paste, you may need to add a touch of sweetness. That could be some keto honey, sweetener, or mango chutney

👩🍳 Substitutions
Depending on your dietary needs, here are a few simple swaps you can make:
- Sausages - for low calorie, swap for leaner meats, such as chicken sausages, turkey, or even vegan or Gluten Free if needed. Or why not try a beef sausage?
- Coconut milk - try reduced fat coconut milk if wanting a lower calorie on a Weight Watchers diet, etc, or coconut cream for keto which has a higher fat content
- Eggplants/aubergines - if you are affected by nightshade fruit and vegetables, then a good substitute is butternut squash, sweet potatoes, bell peppers zucchini, frozen peas, etc
- Spinach - use kale instead to make the recipe more nutrient-dense
⚖️ Variations
Here are a few different ways you can spice up this slow cooker sausages recipe, depending on your personal preference:
- Spicy - add some hotter chili powder if preferred, fresh chillies, garam masala, and use spicy sausages
- Sweeter - stir in some honey, fruit chutney or sugar free sweetener if preferred
- Creamy base - for a more creamy curry, cook the sausage meat with 2 tablespoon of plain flour, and replace the tinned tomatoes with chicken stock and simmer to thicken, Then stir in 150ml cream at the end
- Deluxe - towards the end, stir in a knob of butter, a handful of cheese and/or a large tablespoon of peanut butter for a nutty satay flavour
- Kid friendly - you can use mild spices and omit the chilli flakes
- Vegetarian - not only can you add vegetarian sausages, other things that will bulk up this curry are canned chickpeas, baby potatoes or red lentils

Storing - we prefer eating curried sausages freshly cooked, but it can be stored in an airtight container refrigerated for up to 3 days.
Freezing - cool to room temperature and again, store in a freezer-safe container for up to 3 months.
Reheating - If you want to eat the next day, defrost it in the fridge if required and microwave until piping hot, or on the hob or stove.

Poppadoms - add a crispy crunchy side of poppadoms for dipping in the curry sauce or mango chutney
Rice - although not low carb, I serve it with a side of wholegrains such as cooked brown rice for other family members. Or you could enjoy it with quinoa or cauliflower rice for low carb as a complete meal.

When cooking sausages, just use your favorite brand. Sometimes I use chicken sausages as chicken curry is my favourite, or I sausages I find on offer. But any flavoured sausages of any kind will work, including breakfast sausage.
Yes, you need to cook the sausages before adding them to the curry sauce. You can either fry them in a frying pan on the hob, or oven bake for 20 minutes in a hot oven on medium heat.
You can use any type of curry powder you like, but it's best to use a mild curry powder or curry paste
Yes, this is a keto curry recipe nd yes, with some almond butter slipped in where possible. I've been making a variety lately, such as Vegan keto curries, using cheap low carb veggies when I see them.
To make this curry in a multicooker like the Instant Pot, make sure you pan fry the sausage meat first, then throw everything (except the coconut milk, lemon, spinach and halloumi) into your pot and cook for 10 minutes.
We've also slow cooked sausage curry in the oven. You will need to preheat your oven to gas mark 4, 160c fan, 180c, 350F.
Place the slow cooker ingredients in a large baking dish and cover with tin foil. Then bake for 1 hr 30mins, stirring halfway. If the aubergine is still bitter, bake it for another 30 minutes.

Best Slow Cooker Sausage Curry With Halloumi Recipe
Ingredients
- 1 tablespoon coconut oil
- 10 Sausages pork, chicken or chipolatas
- 1 red onion halved and sliced
- 2 cloves Garlic minced
- 2 aubergines
- 2 tablespoon tikka paste
- 2 tablespoon curry powder
- 1 tablespoon ground ginger
- ½ teaspoon chilli flakes
- 400 g tinned tomatoes
- ⅓ cup tomato puree
- 125 g spinach leaves
- 200 g halloumi diced
- 1 lemon juice only
- 400 g Coconut milk
- 1 tablespoon Sweetener or 2 tablespoon mango chutney
Instructions
- Remove the skins from the sausages and sear the meat in coconut oil while also breaking it up with a wooden spoon until browned.
- Add the onions and garlic and gently fry until softened.
- Now transfer to your slow cooker or crockpot. The add the remaining ingredients except the lemon, spinach, coconut milk and halloumi.
- Give everything a stir, cover and cook on low heat for 6-7 hours or high heat for 3-4.
- Remove the lid and stir in the lmon juice, spinach and coconut milk and put cover again and if not already on, turn your slow cooker up to high heat and cook until the spinach has wilted.
- Meanwhile, add some oil to a large skillet and fry the diced halloumi until golden and crispy.
- Serve the curry with your favourite side adn fresh cilantro and add the halloumi as a garnish and enjoy!
