You can also omit the chilli flakes if you don't want a spicy corned beef hash.

I'm no longer being strict with myself following a low fat diet. In fact, going against many slimming clubs, I'm thoroughly enjoying a combination of healthy fats, protein and veg.
And yes, that's right. I've ditched starchy carbs, which were a staple as part of my previous low fat diet. Why? I'm convinced after listening to Dr Michael Mosley's Fast 800 and The 8 Week Blood Sugar Diet audiobook that my body was turning carbs into fats.

Why I Love This Baked Corned Beef Hash
(Or corned beef hash breakfast casserole, if you will):
- I prefer this crispy low carb corned beef hash recipe to corned beef stew as it's richer
- It takes minutes to prep
- It's low carb and keto-friendly
- This corned beef hash oven version is easier as there's no babysitting a frying pan
- I can dump everything in a baking dish and work in my office while it crisps
- Canned corned beef hash in the oven can be easily doubled with a larger baking dish for two
- You could make it an unofficial Slimming World corned beef hash though, using frylight
- The corned beef calories works out at around 400 calories per person, so I eat it as part of the Fast 800 diet (AKA, 5:2 diet)
- It can be eaten as a low carb breakfast, lunch or dinner!
- Butternut makes it tastier than a traditional corned beef hash recipe
- It's perfect with leftover corned beef as it uses 100g

Homemade Corned Beef Hash Serving Suggestions
I find making corned beef hash like in the form of a traybake satisfying enough on its own. Particularly with a dash of Worcestershire sauce throughout. But, if you're not looking for a low carb corned beef hash, you could use it for:
- as a filling for corned beef pies
- corned beef sandwiches
- After baking, allow to partially cool and mix in some whisked eggs for corned beef quiche
- filling for corned beef pasties
- Make corned beef hash pasta, although I tend to opt for wheat pasta
- You could eat it with reduced sugar baked beans if you're super hungry for breakfast

How Else Can I Make it a Keto Corned Beef with No Potatoes?
There are plenty of other vegetables you can use other than making potato and corned beef hash. But what I have learned is, generally, root vegetables tend to have more sugar in them.
Instead, you could make it:
- Keto corned beef hash with cabbage
- Swap it for cauliflower
- Keto corned beef hash with radishes or turnips
Over the last two months, I've been favouring for a mix of leafy greens and Mediterranean vegetables.

Is Corned Beef Healthy?
I've always thought classic corned beef is unhealthy. But there are now many studies that prove fat isn't always bad. And as this recipe only uses 100g, it's not a huge amount.
However, if you prefer, you could use a lean corned beef hash to reduce the calories. It's also naturally gluten free.
Can I Make It a Slow Cooker Corned Beef Hash?
As it doesn't take very long to cook, I've had no need to try it in the slow cooker. If you do, I would set it on low and add the egg very last minute.
Microwave Corned Beef Hash With Egg
I've also since cooked this corned beef hash recipe in the microwave if I don't have time. It's not crispy, but it does give it a slight creamy corned beef hash texture which delicious.
All I do is place everything except the egg in a large microwavable bowl and cover tightly with clingfilm. The pierce it in a few places and microwave for 5 minutes.
Everything should now be tender. I then lift the clingfilm and crack an egg in the centre. Recover and microwave for 1 minute for a runny yolk. If you want a set yolk, then microwave it for another minute and it's ready to eat.

Baked Corned Beef Hash - Keto & Low Carb
Equipment
Ingredients
- 120 g butternut squash peeled and diced
- 60 g onion diced
- 100 g corned beef sliced and diced
- 4 cherry tomatoes halved
- Dash sea salt
- Dash ground pepper
- 1 tablespoon rapeseed oil or olive oil, but rapeseed makes is more crispy
- ½ tablespoon Worcestershire sauce
- Pinch chilli flakes optional
Instructions
- Preheat your oven at 180 degrees celcius fan or gas mark 4.
- Add everything to a baking dish except the egg and stir or toss until everything's well coated.
- Bake in the oven for 30 minutes or until the butternut is tender.
- Crack an egg in the centre and bake for a final 3 to 5 minutes, depending on how runny you like your yolk and enjoy!
