A deliciously easy mid-week thick and creamy Vegan red pepper satay soup without noodles. With curried roast red peppers as a peanut satay soup base. Includes tips on cooking a satay broth with or without noodles.
Note, this is not low in calories as it is higher in fat, making it a VERY tasty treat on a Keto diet. However, you'd like to make it lower in carbs, I recommend decreasing the pepper quantity.

Recently, I acquired a lot of cheap red peppers which I've been enjoying raw in my salads for extra crunch and flavour.
But, I still had too many left over and didn't want them to go to waste, which is where I created this red pepper satay soup recipe on a whim. And boy, was it good! I'm hooked on ALL satay peanut recipes!

Steps For Easy Peanut Satay Soup

Jump to RecipeIn a nutshell, I made this recipe using my oven, then cooked the rest in my soup maker. Please note, a saucepan and stick blender will work just as perfect!
- Roasted halved red peppers in olive oil and ground cumin and seeds
- Sautéed the onions and ginger until softened
- Add all the peppers in the soup maker (or saucepan), including everything else, except the sesame seed oil, coconut milk powder, lime juice and peanut butter
- Set my soup maker to smooth or simmer for 20 minutes, then blend
- Stir in the final ingredients and enjoy!
Peanut Satay Noodles Recipe Alternative
If you prefer noodles or vegan pasta in a satay broth, then I first suggest just skipping the blending step and chop up the peppers.
Then simply set a soup maker to chunky or simmer as usual. Then add 200ml more water and stir in the noodles and continue simmering until cooked.

Ingredient Tips
Peanut Butter
For the healthiest, purest peanut satay soup, I buy 1kg tubs of peanut butter than is 100% nuts. I love peanut butter and almond butter, as part of a Keto diet, so avoid ones with additives, like sugar, palm oil etc.
Coconut Milk
In an ideal world, I use canned coconut milk. However, I don't always want to use the entire can. And although not as pure, I do sometimes use coconut milk powder as it's easier to use smaller amounts without worrying about it going off.
Nutritional Yeast
There are a few ingredients in my peanut satay recipe that are purely optional, such as nutritional yeast flakes. I'm not convinced it enhances the nutty taste, but sometimes I add to soups as it's high in protein and offers additional Vitamin B12 and D.

Vegan Roast Red Pepper Satay Soup (Keto)
Equipment
Ingredients
- 2 tablespoon Olive oil
- 5 Red peppers Halved and deseeded
- 2 teaspoon Ground cumin
- 2 teaspoon cumin seeds
- 1 Red onion
- 30 g Fresh ginger grated
- 1 clove garlic (Optional)
- Dash sea salt
- Dash black pepper
- 1 teaspoon Chilli powder (Optional)
- 200 g Mushrooms
- 2 Vegan stock cubes
- 2 teaspoon Nutritional Yeast Flakes (Optional)
- 600 ml Water
- ⅓ cup Peanut butter Pure peanut butter
- ⅓ cup Coconut milk powder
- 1 Lime Juice only
- ½ tablespoon Sesame seed oil
Instructions
- Preheat your oven at 180c fan/200c conventional/400F/Gas mark 6.
- Place the peppers in a roasting tin and scatter the ground cumin and seeds, then drizzle with half the oil and bake for 30 minutes.
- In a large saucepan (or saute soup maker), soften the garlic, onions and ginger.
- Transfer all the peppers in the soup maker (or saucepan), including all scrapings and juices left behind for the best flavour.
- Add everything else, except the sesame seed oil, coconut milk powder, lime juice and peanut butter and simmer for 20 minutes or set your soup maker to smooth.
- Stir in the final ingredients and enjoy!
