
When it comes to super quick soup maker recipes, I was pretty impressed with this one. I only discovered it last night in passing on the BBC Good Food website and thought what the hell and adapted it a little to suit my tastes. I’ve been clinging on to my very last massive home grown courgette with the aim of making fritters, but as said in my last post, I don’t find that type of recipe very filling, nor do I with pancakes. Also, what do you have with them? Piles of sweet chilli sauce in my case or use up other more synful white dressings that are hidden right at the back of the fridge. So this was a sweet nod to a great 2015 harvest this year and I will be reminding you all to grow them next year because they were surprisingly incredibly easy with little to no maintenance.
This could easily be adapted for vegetarians if you want to swap the stock and if you want to experiment with seasonings, I know one Facebook member from my I LOVE SW Soup support group recommends 1 tbsp of madras curry powder along with a clove of garlic.
Recipe
Ingredients
700g courgettes, diced
200g or 1 medium potato, skin left on & diced
1 bunch of spring onions, sliced
650ml water
2 chicken stockpots
2 tsp paprika
80g reduced fat mature cheddar, grated (*This half of one of your healthy extras per person)
Generous amount of seasoning
A little bit extra grated cheese per bowl

Method
- Place all of your ingredients in your soup maker, except the cheese. If you struggle to place the lid on securely, press blend for 30 seconds to help it shrink down a little.
- Set to smooth, or if using a pan, simmer for 20 minutes and blend.
- Now stir in the cheese, blend again and season more if needed.
- Pour in to bowls and top with a little more grated cheese on each.
Next time I’d like to add some garlic and will update this recipe if I think it is better with (or let me know your thoughts below).

Absolutely! I would say simmer for about 15-20 minutes and blend 😁
