Slimming World Chorizo and Butternut Hash recipe is one of my favourite one-pan dishes. It’s only 2.5 syns per serving with a touch of Spanish spice and is versatile for breakfast, brunch or dinner.
Are you a sweet or a savory person in the morning? I’m definitely the latter but a hot bowl of porridge also does the trick. As for cold cereal first thing, I’m less inclined unless it’s a hot Summer’s day.
But whichever way you sway, you seriously have to try this divine chorizo and butternut hash. I would happily eat this morning after morning. And that’s because it’s so comforting and satisfyingly filling.
In fact, the Northern girl in me didn’t even feel the need to reach for a sauce or dressing.
TO SYN OR NOT TO SYN CHORIZO?
It’s completely up to you whether you want to be a “synner” on Slimming World. I do believe sometimes a little bit of what you fancy does you good. So while we went to Spain over Christmas, I couldn’t resist bringing back some authentic chorizo. Oh, and hot paprika!
The chorizo is completely optional and works out at 2.5 syns per 28g. However, I have plenty of chorizo infused recipes here using herbs and spices such as:
- cayenne pepper
- mild chilli powder
- Salt and pepper
HOW TO MAKE SLIMMING WORLD CHORIZO AND BUTTERNUT HASH:
It really is a doddle to make this chorizo and butternut hash once you’ve weighed and chopped everything. But what I love the most, is, as long as you have an oven proof frying pan, it will save on washing up!
Firstly, preheat your oven at 200 degrees. Meanwhile, peel and chop all the veg. If you find your butternut a bit tough, then try microwaving it first for 5 minutes.
Then, grab your oven safe frying pan and spray well with cooking oil spray. Next, I add the the onions and garlic and slowly caramelise them in the pan. And once they’ve all curled up, I add the butternut, chorizo and spices and oven bake for 20 minutes.
HOW TO COOK THE EGGS FOR CHORIZO AND BUTTERNUT HASH
How you cook your eggs for chorizo and butternut hash really is a personal preference. I normally crack a couple of eggs on top of the cooked butternut, then bake for a final 5 minutes.
Or, sometimes to avoid the yolk bursting during the cracking stage, I pan fry in some Frylight.
Either way tastes delicious and prefer the extra protein to keep me going through the day.
TIPS FOR MAKING HEALTHY CHORIZO AND BUTTERNUT HASH:
If you’re not familiar with the Slimming World Extra Easy plan, here’s a few tips to help cut down on calories:
- Remove all fat from your bacon
- Swap cooking oils for low calorie sprays
- Try to opt for a reduced fat chorizo
- Weigh your chorizo as opposed to eyeballing it

Chorizo and Butternut Hash: Slimming World Low Syn
- Low calorie cooking oil spray
- 1 onion halved and sliced
- 1 clove garlic minced
- 600 g butternut squash peeled and diced
- 56 g chorizo *2.5 syns per 28g
- 4 bacon medallions fat removed
- 2 eggs
- 1 tsp hot paprika
- Fresh parsley to garnish
- Preheat your oven on 200 degrees.
- Using an ovenproof frying pan, spray with cooking oil spray.
- Add the onions and garlic and gently saute until softened.
- Then add the butternut, chorizo, bacon and seasoning, then continue to fry for 5 minutes, stirring occasionally.
- Now pop in the oven for 20 minutes.
- Remove from the oven and crack on top 2 eggs and return to the oven for a further 5 minutes or until the eggs have set and yolk is still runny.OR: pan fry separately in a frying pan using Frylight and place on top.
- Serve and sprinkle with freshly chopped parsley.
