
We all know how to make a classic porridge and if I was here telling you how, then surely there'd be something wrong with me. Today's post is not about classic, it's about unique and possibly new flavour combinations.
95% of my mornings, I eat porridge for breakfast in some form or other and there are several reasons for this. Firstly, it fills me sufficiently until lunchtime, secondly, it's ridiculously quick where I can spend valuable saved time waking up with a coffee, answering emails, getting ready and so on. Then the last three reasons is that it costs pennies per serving, it's flavourless meaning it's beautifully versatile; I'm sure someone could have a food blog that is solely dedicated to porridge recipes and finally 35g of basic porridge with sweetener and water is around 135 calories.
I find that I don't really eat enough calories in the morning and sometimes lunch with risk of being tired by dinner time, so I have found it so important to fully load my porridge with all sorts of extra nutritious goodies like nuts and seeds. It definitely helps me get through the day.
So I am about to show you 3 servings of porridge in 3 combinations that I created this week. If you're a regular porridger like myself, then you're probably always wanting to find new ways to spice up your oats and hopefully you can take something from this.

The High Energy Chocolate & Peanut Butter Porridge
If you're a Snickers lover like me, then I totally recommend this intense chocolate and peanut butter recipe! If you don't think you can stomach this amount of chocolate in a morning (are you man enough, I mean?) then half the cocoa powder and increase it next time if preferred.
Recipe
35g rolled porridge oats
2 tablespoon dessicated coconut
1 teaspoon cocoa powder
4 teaspoon stevia sweetener
3 dates, stoned and chopped
1 tablespoon peanut butter (I used 100% peanuts by Meridian)
drizzle of agave syrup (or honey if not vegan)
pinch of whole almonds, pumpkin and sunflower seeds
A cup of cold water
Place the oats, water, sweetener and half the coconut into a small saucepan and simmer until cooked.
Mix in a little agave syrup, the peanut butter, dates and top with the remaining ingredients and one last drizzle of agave syrup.
The Gingerbread & Apple Porridge
This has a warm and delicate gingerbread taste. If you want a more intense ginger flavour then don't be afraid to experiment and add more, or to play it safe and add more mixed spice at the end. It reminds me of making Delia's gingerbread men at Christmas as a naughty excuse for some seasonal snacks. One thing I would love to add but don't have, is some orange zest and cranberries, sultanas, but it's only May, so think I'll save this explosion of flavours concept for December. However, right now, I am more than happy to eat this lighter Spring version.
Recipe
35g rolled porridge oats
A cup of cold water
1 teaspoon ground ginger
1 teaspoon mixed spice
1 tsp mixed seeds
1 tablespoon sweetener
1 grated apple
1 tablespoon ground almonds
2 dates, stoned and chopped
Pinch of whole almonds
Another Sprinkle of mixed seeds on top
Another sprinkle of mixed spice on top
Drizzle agave syrup (or honey if not vegan)
Combine all the ingredients, except the apple and hold back the spices and a little agave for the top. Simmer until all the moisture has been absorbed then mix in the apple and sprinkle with more agave, seeds and spices.
The Lemon, Almond & Walnut Spiced Porridge
This is a delicately sweet but protein fuelled porridge which you can up the agave for a much more intense kick.
Recipe
35g rolled porridge oats
A cup of cold water
½ teaspoon vanilla essence
The zest from ¼ of a lemon
A pinch of salt (to balance the lemon)
¼ teaspoon ground nutmeg
¼ tsp ground cinnamon
1 small peeled, cored and chopped apple
1 tablespoon agave syrup
1 teaspoon ground almonds
1 tablespoon whole almonds, chopped
1 tablespoon walnuts, chopped
Simply combine all the ingredients, except the chopped nuts and apple and simmer until thick and the oats have absorbed the water. Now mix in the nuts and sprinkle with the chopped nuts and eat.
