A delicious coca cola marinade recipe ideal for pulled pork or gammon, or eaten as a low calorie cola BBQ sauce. In a sweet, smokey and mustard cola tomato sauce, I make it using my diet coke gammon stock. But I'll also show you how to make coke marinade straight from a can.

Every time I've cooked my slow cooker cola gammon in coke, I've almost always ended up pouring it down the drain. It's not because I don't like it.
In fact, it's the complete opposite. I just never seem to get round to using it all up. Occasionally I've made soup with it as it gives a delicious teriyaki flavour. But today, I'm finally sharing with you my diet coke bbq sauce.

How to Make Barbecue Sauce With Coke
If you're here because you like to marinate ham in coke using a slow cooker or instant pot before turning the cola stock it into a coca cola bbq sauce, then I first leave it to go cold.
This allows any fat residue to rise to the top so I can scoop it out. If you're not following a Slimming diet, then this isn't vital. If you are, you've probably trimmed off all or most of the fat before cooking. So, this will only be a 1 minute job.
If you have a lot of fat in the cola stock and you're in a rush, then you may be successful with a fat gravy separator. But more so if there's a lot of fat in it.

How Is This a Low Calorie Barbeque Sauce Recipe?
To make my easy barbecue sauce low calorie, I always make it with diet coke. Some may say this is an absolute no-no for thickening.
However, instead, I add 6 level teaspoons of runny honey which needs to be counted on a Slimming plan.
When stirring all of the coca cola barbecue sauce into a 1kg joint of pulled cooked gammon, you'll find it serves about 4 people. This then works out at around 52 calories per serving, which I think is very good. Or, it's even less if you're using it as a spoonful of my diet coke bbq sauce recipe on a burger, etc.

Cola Barbecue Sauce Alternatives
- Make it a cherry cola bbq sauce
- Dr Pepper BBQ Sauce
- Pepsi BBQ sauce
- Try it with Coke 0
- Add 1 tablespoon of curry powder to make a Currywurst sauce cola marinade
- Get experimental with others, like Fanta orange pulled gammon, etc

Storing Your Cola BBQ Sauce Recipe
If you've made a coke and soy sauce marinade or without the latter from diet coke gammon reserve, you may want to store it before using.
Personally, I've always used it immediately as a pulled gammon sauce. But with the sugar and vinegar as a preservative, I would think that it's ok to consume within a month.
I'd store it in a sterilized lidded jar in the fridge. If you want to freeze it, then mixing it with the meat beforehand the storing for up to 3 months should be fine too.

How to Make Coke Marinade Recipe

Coca Cola Marinade (Or BBQ Sauce)
Ingredients
- 300 ml diet coke or classic coke if preferred
- 6 teaspoon honey
- 4 teaspoon mustard powder Or use 2 teaspoon Englsh mustard
- 2 teaspoon smoked paprika
- 2 tablespoon tomato puree
- ⅛ teaspoon black pepper *cracked in a pepper grinder
- 2 teaspoon apple cider vinegar
- 1 tablespoon light soy sauce *Only if you're not using diet coke gammon stock which has enough salt in it
Instructions
- In a large non stick frying pan, add all of the ingredient *except the soy sauce if you're using diet coke gammon stock.
- Bring to a boil and cook for 5 minutes, stirring here and there until it's either reduced by half, or you have your desired consistency.
- Use immediately as a marinade or stir into a 1kg pulled gammon joint or pork, cover and warm up in the oven before serving.
