Well, here's my fluffy mug cake chocolate chip recipe you need to try! It takes less time to make than a full chocolate and vanilla cake. Minutes to prep and make, and results in a soft gooey chocolate brownie texture.
And the best part? You'll never believe that it's low fat, either, with 18 grams of protein. We love this chocolate microwave pudding as a quick sweet treat after dinner, or supper with fresh fruit, custard, or a scoop of vanilla ice cream.

Oats - it doesn't matter whether you're using old fashioned rolled oats (jumbo), or quick cook instant oats - you'll need to use a food processor to mill them into oat flour for the best results. If you don't have a food processor, then the best way would be to use Ready Brek
Egg - this is a whole egg to help the cake rise. We've made it with small and medium eggs.
Fat free natural yogurt - adds moisture for a fluffy chocolate chip mug cake that's low fat way as opposed to using melted butter or melted coconut oil. *This is if you don't microwave too long
Vanilla extract - helps enhance the chocolate flavour
Baking powder - this is to help the oat flour rise due to the lack of gluten. *Ensure you are using Gluten Free baking powder if needed. Note: this is not baking soda
Fruit syrup - you can use whatever sugar or powdered sweetener you prefer. We use Sweet Freedom fruit syrup for a low calorie option, or you could use 3 teaspoon of zero calorie natural sweetener caster sugar or brown sugar
Cocoa powder - for the perfect mug cake with a rich chocolate flavour
Milk chocolate chips - I chop my own into mini chocolate chips from whatever chocolate bar I have in the house as it is cheaper. But our favourite is Galaxy chocolate orange
📋 Instructions
Here are my step-by-step instructions on how to make a chocolate chip mug cake the healthier way!

1. First, mix all of the wet ingredients together in a microwave-safe mug.

2. Now slowly stir in a little bit of the dry ingredients, and keep repeating until it is fully blended.
Ensure you scrape the bottom of the mug to avoid lumps of unblended flour.

3. Stir in most of the chocolate chips.

4. Then sprinkle the remaining chocolate chips on top.
Now place your easy cake on top of a saucer to capture any spills and microwave for 1:30 minutes. It will rise significantly, then shrink while cooling.
Tip: Note, I use an 800 watt microwave, but as a rule, if there is a lot of any soft mixture on top, I microwave for longer in 20-second increments. However, I don't recommend going over 2 minutes, otherwise, it can turn dry

👩🍳 Substitutions
Depending on your dietary needs, here are a few simple swaps you can make and still result in a great recipe:
- Oat flour - swap for almond flour or coconut flour* for keto mug cakes, although this easy chocolate chip mug cake may not rise as much. *You don't need much flour: I would use with 2 tbsps of coconut flour initially, but you might want to use 1/16 teaspoon xanthan gum for a better bake
- Cocoa powder- swap for cacao powder, carob powder, or instant hot chocolate
- Egg - swap for a flax egg if preferred
- Natural yogurt - you can swap for cream cheese or any kind of milk or non-dairy milk such as soy milk, unsweetened almond milk, etc
- Vanilla extract - this could be vanilla essence, or almond extract which also tastes lovely
- Chocolate chips - swap for cacao nibs, peanut butter chips, white chocolate chips, or small fudge pieces for a chocolate fudge brownie cake taste. Or if you are on a strict weight loss diet, you can leave these out
- Fruit syrup - swap for maple syrup, coconut sugar, powdered sweetener or caster sugar, brown sugar, golden syrup, etc

⚖️ Variations
Here are some easy ways you can enhance and personalise this soft chocolate chip cookie cake recipe for next time:
- Espresso - enhance the fudgy chocolate with ½ teaspoon of espresso powder like my favorite cake: this espresso coffee chocolate brownie recipe
- White chocolate - add chunk of white chocolate with fresh raspberries
- Chocolate and banana - try using for 70g of milk, 20g of mashed banana (⅓ of a banana), and ½ tablespoon of creamy peanut butter for added fat
- Fresh fruit - for a sumptuous chocolate chip muffin in a mug, stir in some juicy fresh raspberries with mint, and blueberries or sour cherries to balance the sweetness
- Fruit and nut - similar to my fruit and nut chocolate brownies, you could stir in some dried fruit and chopped nuts such as walnuts and top with almond flakes
- Chilli - add some chilli powder for an extra warming flavour
- Deluxe - add a pinch of salt and extra spices such as a pinch of saffron, ground cardamom seeds, and ½ teaspoon cinnamon. If not low fat, you might want to add ½ teaspoon of vegetable oil or canola oil
- Kid friendly - top with banana slices, chocolate sauce, or cake sprinkles to make it more colourful

Storing - we prefer eating this chocolate chip cake in a mug recipe immediately after cooking it in the microwave. However, it can be stored in an airtight container, or covered with plastic wrap and refrigerated for up to 3 days.
Freezing - cool to room temperature and again, store in a freezer-safe container for up to 3 months.
Reheating - If you want to eat the next day, defrost in the fridge if required and microwave until piping hot. Note, you might want to add 1 tablespoon of water to prevent it from drying out

- I tend to blend a big batch of oats in one go so I have a constant supply for when I fancy a quick easy treat

Yes, we prefer the texture of this microwave chocolate chip mug cake in the oven as it rises beautifully, but it is not as quick as 1 to 2 minutes to cook.
Just preheat your oven to gas mark 4/160c fan/180/350F and bake these single serving desserts for 30 minutes using an oven safe mug, coffee mug, or a small baking dish like a ramekin.

- 100 g Fat free natural yogurt
- 20 g Chocolate chips (2.5 tablespoon = 2 tablespoon for the cake mix, ½ tablespoon for the top) *estimated at 4 syns)
Instructions

Very nice. If you separate the egg first and make the batter with just the yolk then whip the white with a fork of mini whisk until it goes foamy then fold in with a metal spoon before microwaving you get a lighter sponge and it rises a little more.
