I’m really not a cereal person in the morning.
If I have a bowl, I just become unpleasantly hungrier than ever, and it’s usually too sweet for my stomach to tolerate.
But something that’s been really hitting the spot every day for the last week, is my new all day breakfast tray bake.
I also have to do everything in my power to save any fibre (Healthy Extra B) for an evening, in case I have a late night craving.
I can wholeheartedly confirm that cereal bars go down perfectly with a pre-bedtime cuppa!
My motto is definitely breakfast like a king. Well, you know the rest of it!
And this all day breakfast is so versatile! You can add as much speed food as you want and I’ve varied it from time to time.
Sometimes I’ll add mushrooms, others I’ve added sliced tomatoes which tastes great.
Other days, I’ll eat a quarter in the morning and another for lunch. It’s just a great breakfast that hits the spot and doesn’t leave me constantly thinking about when my next meal’s going to be!
Slimming World Syn Free All Day Breakfast Tray Bake
A healthy all day layered breakfast tray bake.
- 2 potatoes peeled & finely sliced
- 1 onion diced
- 8 rashers lean bacon fat removed
- 2 tins baked beans
- 100 g mushrooms sliced
- 80 g cheese
- 4 eggs
- 2 tomatoes (optional) sliced
- sprinkle salt
Preheat the oven at 180 degrees, spray a large rectangular baking dish with frylight. then line with the potato slices.
Spray with frylight once more, season with salt and bake for 20 minutes.
Now, spray a large frying pan with frylight and fry the bacon, onions and mushrooms until tender.
Once the potatoes are part cooked, tip out the contents of the frying on top.
Now spread over the beans, eggs then cheese and bake for 10 minutes.
Once cooked, serve and enjoy!
