I’m really not a cereal person in the morning. If I have a bowl, I just become unpleasantly hungrier than ever, or it can often be too sweet for my stomach to tolerate.
Then I’m having to for some sort on antacid or salty food to counteract it, and end up eating something I didn’t really want to have in the first place. But something that’s been really hitting the spot every day for the last week, is my new all day breakfast tray bake.
It’s syn free using part of your healthy extras and to be honest, it’s great for adding whatever extra veg, or meat like sausages if you will. It’s the champion of Slimming World breakfasts in my eyes.
It’s a simple tray bake. Just spray a large rectangular baking dish with frylight, then thinly slice your potatoes and spread a layer along the bottom.
Next, you’ll need to saute any ingredients that won’t cook in the dish during the short time it will be in the oven. So I use frylight to cook liked fried onions and mushrooms in to ensure it’s still syn free and the same goes for any bacon.
WHAT ELSE COULD YOU ADD?
I’ve had a lot of suggestions since my recipe went LIVE about adding sausages, which I think would work amazing. I’d also like to like to try sliced tomatoes. Or perhaps you have a family where the majority aren’t doing Slimming World. So there’s no harm in keeping on side full of naughtier things like hashbrowns, onion rings… maybe blackpudding if that’s your bag? As long as the fats don’t creep on to the healthy side of course!
I also have to do everything in my power to save any fibre (Healthy Extra B) for an evening, in case I have a late night craving though.
When I do enjoy cereal (usually porridge), I can wholeheartedly confirm that it (or cereal bars) go down perfectly with a pre-bedtime cuppa!
My motto is definitely breakfast like a king. Well, you know the rest of it! And this all day breakfast is so versatile! You can add as much speed food as you want and I’ve varied it from time to time.
CAN YOU REHEAT THIS?
Yes, absolutely! Some days, I’ll eat a quarter in the morning and another for lunch.
It’s just a great breakfast that hits the spot and doesn’t leave me constantly thinking about when my next meal’s going to be!
The only difference when reheating eggs is that the yolks never return back to their once runny state, so I think it’s always better to eat while it’s freshly cooked.

Slimming World Syn Free All Day Breakfast Tray Bake
A healthy all day layered breakfast tray bake.
- 2 potatoes peeled & finely sliced
- 1 onion diced
- 8 rashers lean bacon fat removed
- 2 tins baked beans
- 100 g mushrooms sliced
- 80 g cheese
- 4 eggs
- 2 tomatoes (optional) sliced
- sprinkle salt
Preheat the oven at 180 degrees, spray a large rectangular baking dish with frylight. then line with the potato slices.
Spray with frylight once more, season with salt and bake for 20 minutes.
Now, spray a large frying pan with frylight and fry the bacon, onions and mushrooms until tender.
Once the potatoes are part cooked, tip out the contents of the frying on top.
Now spread over the beans, eggs then cheese and bake for 10 minutes.
Once cooked, serve and enjoy!
