Low calorie cooking oil spray - this is for an unofficial Slimming World breakfast. If not, you could use olive oil or melted butter for frying and greasing the baking tray
Raw potatoes - peeled and finely sliced no more than 3mm thick for the base in the baking dish. These are a healthier twist on hash browns. You could use pre-cooked potatoes to reduce the cooking time
Onion - diced to give this full English breakfast casserole a more caramelised flavour
Lean bacon medallions - these are rashers with all fat removed and discarded
Baked beans - these are tinned baked beans in tomato sauce. You can use two if serving 4 people, or 1 can between 2.
Mushrooms - these are button mushrooms sliced, then fried
Mature cheddar cheese - grated and sprinkled on top of the eggs. It's not a traditional cooked English breakfast ingredients, but we love it
Eggs - cracked on top for a classic bacon and egg tray bake, or you can skip them, or scramble instead
Seasoning - this is a pinch of salt and black pepper
📋 Instructions
For the first step, preheat oven to 180 c fan, 200c conventional, gas mark 6 or 400F.
1. Spray the baking tin with cooking oil spray.
Then line a single layer of potato slices at the bottom, season well, and spray again and bake for 20 minutes in the oven.
2. Next, spray a large frying pan with more oil spray.
Then fry the bacon until cooked, then add the onions and mushrooms to the same pan and fry until they are golden brown and tender.
This should take about 6-8 minutes.
3. Once the potatoes are part cooked, scatter the bacon, onions and mushrooms.
4. Pour over the beans and spread the layer evenly until everything is covered.
5. Crack the eggs on top.
6. Sprinkle over the grated cheese, making sure the eggs are also covered.
Now bake in your preheated oven for a final 10 minutes and serve.
Tip: for consistently runny yolks with cooked egg whites, try to aim for an even layer of ingredients to bake your breakfast in the oven. Or you might want to fry your eggs separately

Depending on your dietary needs, here are a few simple swaps you can make to this full English traybake:
- Potatoes - swap for veg mix or leftover roasted root veg for a base of a lovely breakfast tray bake

Storing - we prefer eating this recipe freshly baked, but it can be stored in an airtight container and refrigerated for up to 3 days. Or, simply cover the dish with tin foil stored in the fridge.
Freezing - cool to room temperature and again, store in a freezer-safe container for up to 3 months. However, I recommend not freezing the eggs and only add them when you are ready to eat.
Reheating - If you want to eat the next day, defrost in the fridge if required and microwave until piping hot, or on the hob or stove. However, we don't recommend reheating eggs in the microwave as the runny yolks turn solid and powdery.

Ingredients

- 8 rashers lean bacon fat removed
- 2 tins baked beans
- 100 g mushrooms sliced
- 80 g cheese *to be counted or used as your allowance
- 4 eggs
- 2 tomatoes (optional) sliced
- sprinkle salt
Instructions
- First, preheat oven to 180 c fan, 200c conventional, gas mark 6 or 400F.
- Spray a large rectangular baking dish with frylight. then line with the potato slices. Spray again, season with salt and pepper, then bake for 20 minutes.
- Now, spray a large frying pan with frylight and fry the bacon, onions and mushrooms until tender.
- Once the potatoes are part cooked, tip out the contents of the frying on top.
- Now spread over the beans, eggs then cheese and bake for 10 minutes.
- Once cooked, serve and enjoy!

Hi, I can't imagine the eggs being the best texture. I think it's probably best to do your batch cooking without, and after reheating in the oven, bake the eggs on top following the instructions. At least you know they'll be nice and runny then 🙂
