Similarly to my strawberry blondie recipe, I've been playing around with flour and cake recipes during lockdown. I've been having a bit too much fun, really.
It wasn't long before I introduced my first ever Kitchen Aid as a permanent fixture on my countertop. But with these chewy chocolate chip cookie bars with strawberries, I played around with sugar and almond.
And what I ended up creating were these incredible chewy chocolate chip cookie bars with strawberries and almonds. It's kind of like a choc chip tray bake, but we like to call them cookie bars with chocolate chips!

How to Make Bar Cookies With Strawberries
You'll find a full list below with my cookie bar ingredients. But it's very simple. All you have to do is:
- Preheat your oven, then butter and line a 20cm x 20cm baking dish or tin with baking paper
- Mix all the ingredients together in a mixer, except the strawberries and almonds
- Place the sliced strawberries on top and sprinkle with caster sugar
- Finally, add the sliced almonds (or flakes if using)
- Bake in the oven for 40 minutes
- Allow to cool for 10 minutes before slicing and transferring to a cooling rack
- Dust with a little icing sugar if desired and enjoy!

To make my chewy chocolate chip cookie bars, I used the following:
- Kitchen aid
- Spatula
- 20cm square baking tin*
- Weighing scales
- Measuring spoons
- Chopping board
- Chopping knife

Can I Bake Them in a Pan?
You don't even need to bake in a brownie tin if you don't want to. You could easily make chocolate chip pan cookies by placing them in a well greased skillet. Although, I do recommend lining it first.
Are These Gluten Free Chocolate Chip Cookie Bars?
As I use cake flour, these are sadly not gluten free. However, I am sure they will work just as well with gluten free flour. I will update this post once I have tried it.

Chocolate Chip Cookie Bars Baking Tips
- Sprinkle the strawberries with a 1 teaspoon of caster sugar so it isn't tart with each bite
- We place the strawberries at the end so they don't fully sink
- Or you would be better mixing with a tablespoon of flour if you prefer it in the mixture
- This choc chip cookie traybake will firm while they cool. So anything between 30-40 minutes is good.

More Bar Cookies Recipe Variations
- You could make them as oatmeal chocolate chip bars by using oat flour milled in a blender. Note, it may not need quite 40 minutes as oat flour is more absorbent.
- If you added a sweet cream cheese layer on top, they are easily adapted to chocolate chip cheesecake bars
- You could make them as peanut butter for chocolate chip bars by replacing strawberries with some dollops of peanut butter
- Make them as chocolate chip blondies instead by removing 20g of sugar and ground almonds

Chewy Chocolate Chip Cookie Bars With Strawberries
Equipment
Ingredients
- 75 g unsalted butter melted
- 150 g light muscovado sugar
- 1 egg medium
- 120 g cake flour
- 25 g ground almonds
- ½ teaspoon baking powder
- 90 g milk chocolate chips
- 50 g strawberries sliced
- 1 teaspoon caster sugar
- 10 g almond flakes or slices for topping only
Instructions
- Preheat your oven, then butter and line a 20cm x 20cm baking dish or tin with baking paper.
- Mix all the ingredients together in a mixer, except the strawberries and sliced almonds.
- Place the sliced strawberries on top and sprinkle with caster sugar.
- Finally, add the almond slices (or flakes) and bake in the oven for 40 minutes.
- Allow to cool for 10 minutes before slicing and transferring to a cooling rack.

are there ground almonds on the top or flaked?

Very good point and thanks for addressing this missing step. The ground almonds get mixed into the cookie dough and the flakes/slices are for the top only 🙂
