This delicious and healthy chilli prawn linguine recipe for two is easy so easy to make. I'll also talk you through some substitutes with dry store cupboard foods.

At the time of writing, many of us all over the world have been reaching to the back of our cupboards to use what we have.
And here's my own recipe from today's lunch and it's prawn chilli linguine. You'll notice some of the vegetable ingredients may appear to be a bit unusual.
But I want you to know that you can replace these with what you have instead. As long as you can panfry them too, you're good to go.

Use Ingredients You Have
First, you'll need some prawns to be a prawn linguine. Fortunately, I'd bought these a few weeks ago and frozen them for a later date. If you don't have them, then you might like my tuna, sweetcorn pasta.
Other ingredients you could use:
- dried spaghetti
- rice - it doesn't need to be linguine!
- sweetcorn
- peas
- broccoli florets
- cauliflower
- mushrooms
Use whatever you have to bulk your meals out with healthy food to help stay full for longer.

Can I Freeze Chilli Prawn Linguine?
Yes, you can freeze this prawn linguine. However, I recommend eating it freshly cooked as the linguine will soak up any juice, making it quite dry.
If you want to freeze it, it would be more beneficial to fully defrost and stir in more lemon and cheese.
And always try to add fresh herbs where you can after cooking. Heat can destroy fresh herbs, losing its flavour.

Is This Chilli Prawn Linguine Healthy?
Yes, this chilli prawn linguine is extremely healthy! In fact, the only fats used in this recipe is a touch of cooking oil and a tablespoon of cream cheese. And that's if you want it.
To ensure you eat fewer calories (if that is your aim), then try to use:
- fresh vegetables not soaked in oil or sugar
- dried linguine or spaghetti
- low-calorie cooking oil spray
- low fat cheese if using
If you fancy a more luxurious linguine, then I highly recommend this creamy cheesy leek and bacon recipe. Note, it has a lot more calories but does use reduced-fat cream.

Healthy Chilli Prawn Linguine Recipe
Equipment
Ingredients
- cooking oil spray
- 200 g linguine
- 220 g king prawns cooked
- 1 onion finely diced
- 1 red chilli deseeded and chopped
- 1 clove garlic minced
- 25 g fresh ginger grated
- 1 carrot sliced or spiralised into ribbons
- 150 g courgette *OR ANY EASY PANFRIED VEGETABLES
- Pinch sea salt
- Pinch pepper
- 1 tablespoon tomato puree
- 1 tablespoon cream cheese low fat and OPTIONAL
- Lemon balm or any fresh herbs you wish
- 1 lemon juice only
Instructions
- First, cook your linguine as instruced on the packet.
- Meanwhile, in a large frying pan, saute the ginger, chilli and onion in cooking oil spray.
- Then add the salt and pepper, carrots and courgettes and gently fry for another 5 minutes.
- Now add the cooked prawns and cook for another 3 minutes.
- Transfer the linguine and lemon juice, stir and serve with fresh herbs where possible.
