This skinny skillet hash brown recipe is easy to make and makes great filling breakfast treat with a fryup, eggs, beans, etc.

It's actually been a long time since I've made my first hash browns recipe from scratch. In fact, it was one of the first recipes I shared and I get tagged on Instagram every week how someone has enjoyed them.
They're very simple to make, but I suppose the reason I hadn't made them much since is that I know it's way easier with a food processor.
So, with the arrival of my latest Amazon purchase, I've been going grating mad and loving it! And my new skinny skillet hash brown recipe was born.

How to Make This Giant Skinny Skillet Hash Brown Recipe
First, you'll find a printable full list of ingredients and instructions in a recipe card towards the bottom on this page. But I just want to quickly talk about the process.
- Preheat your oven at 200 degrees Celcius
- You'll need to grate the potatoes - a food processor is so much easier
- Then rinse the grated potato in a colander under a running cold tap
- To remove the excess moisture, squeeze a handful of potato at a time over the colander and place in a microwaveable bowl
- Repeat until you've squeezed all moisture out
- Place in the microwave for 2 minutes
- Meanwhile, grate and saute the onions
- Then in a mixing bowl, mix the potato and onions with an egg and plenty of seasoning
- Add a teaspoon of olive oil or butter in the skillet, OR as I did, with a low calorie cooking oil spray
- Press the potato mixture down evenly and spray again, then bake for 15 to 20 minutes and serve

What If I Don't Have a Microwave?
If you don't have a microwave to partially cook the potatoes, then there are two other ways you could do it. The idea is to help it crisp in the oven by making the potatoes slightly soft and soak up more oil.
These options could be:
- Leave the skin on the potatoes and boil whole for 10 minutes, then cool under a cold tap before peeling an grating easily
- Or peel and grate the potatoes, then place in a tiered steamer to cook for 5 minutes. Let it air out after for a few minutes
Then continue mixing the potato, egg and seasoning before pressing down in the skillet and baking.

How Healthy Is This Skinny Skillet Hash Brown Recipe?
As this skillet hash brown recipe only used cooking oil spray for fat, they are very low in calories.
However, if you'd like your hash browns to be even more crispy, then I suggest using a tablespoon of olive oil.

If you'd like to reheat these hash browns, then I would recommend heating up in a frying pan with oil. Or, setting the oven to 150 degrees and cover the skillet with tinfoil for 10 minutes.
Then remove, spray with oil again and continue to cook uncovered for another 10 minutes.
