Here’s a quick recipe video I managed to squeeze in today while I made a much awaited Sunday Roast. It’s been a months since I’ve made one and they’re great to pack loads of veggies one your plate. Potatoes is something we have in abundance at the minute, so this classic favourite was a no brainer.
What is more, I have plenty of leftovers for bubble & squeak this week!

Slimming World Roast Potatoes with Oxo (Syn Free)
- Spray oil
- 1 kg potatoes peeled & quartered
- Pint boiling water
- Sprig rosemary
- First, boil the potatoes for 10 minutes, then drain and transfer to the roasting tin.
- Now mix the pint boiling water with the oxo, seasoning and rosemary and pour on top of the potatoes.
- Spray with oil spray and bake in the oven for 1 hour, or until the juices have all evaporated, but basting every 15 minutes of so.
