This no pastry bacon and egg pie is the perfect dish for a low carb breakfast casserole or brunch for the whole family to start the day. It's easy to make with cheese, onions, and yogurt and is naturally gluten-free

Years ago before I started eating healthy, I was inspired to make the Hairy Bikers bacon and egg pie. It was a great recipe!
But as my diet changed direction, I started making a regular quiche without the pie crust. And you know what? I didn't miss it, just like in this egg and bacon crustless pie recipe.
It's high in protein, low in fat and carbs, making it the perfect recipe for weight loss if you want to feel full for longer.

🛒 Ingredient Notes

Cooking oil spray - I use Fry Light, but you could use olive oil to saute the onions and grease the pie dish
Brown onion - diced, or mix in sliced spring green onions (scallions)
Bacon - medallions with bacon fat removed, or swap for lean turkey bacon
Eggs - I recommend medium eggs to prevent the egg white from spreading all over. Or separate 4 egg yolks and the egg whites with the yogurt
Cheese - I use grated mature cheddar or Red Leicester, but it is also perfect with a mix of different cheeses from a cheese board
Fat free natural yogurt - for the egg filling base, or any heavy cream will work
Mustard powder - but you could use any herbs or spices you wish
Seasoning - sea salt and black pepper
📋 Instructions
Start by preheating your oven to 200 c fan degrees, 220c, gas mark 7, 425F.

1. Add the oil to a large frying pan.
Then saute the diced onions until softened and set aside.

2. Next, fry the uncooked bacon medallions on both sides until fully cooked. Then set aside.
Note: you can fry chopped bacon if preferred.

3. Now grease or spray your quiche dish with oil.
Then scatter some onions in the bottom of the dish, then layer with 3 bacon medallions.

4. Top with the remaining cooked onions, and crack 4 of the whole eggs on top*.
*If preferred, you can separate the egg yolks, and save the egg whites for step 7.

5. Next add the remaining bacon.

6. Then sprinkle the grated cheese on top.

7. In a large bowl or jug, make the egg mixture by mixing the eggs (and any egg whites if you held reserved them) yogurt, mustard powder, 50g of cheese, and seasoning.
Then pour it on top of the bacon quiche filling.

8. Add the remaining cheese.
Now place the quiche on a baking tray and bake in the oven for 20 to 25 minutes until the top of the pie is firm and golden brown.
Cut into individual slices and serve.
Tip: if you prefer bite size pieces, you can chop the cooked bacon instead of layering whole medallions.

Depending on your dietary needs, here are a few simple swaps you can make and still make a delicious easy quiche recipe:
- Yogurt - swap for fat free quiche, sour cream, quark, or even soft cream cheese watered down with a little bit of skim milk
- Bacon - use turkey bacon for lean protein, cooked ham, sausage, or shredded chicken. For vegetarians, swap for more veggies, such as peppers, mushrooms, or make a baby spinach quiche
- Onions - swap for red onion, shallots, spring onions, or even wild garlic
- Mature cheddar - swap for blue cheese (stilton), feta, gruyere, or whichever you wish

⚖️ Variations
Here are some different ways you can enhance this recipe to make the perfect meal, depending on your personal preference:
- Spicy - add slices of red chilli with the onion and bacon for heat
- Deluxe - use good quality Canadian bacon or streaky and create an egg mixture with double cream for the ultimate indulgence
- Kid friendly - serve with homemade oven chips with ketchup, beans, or garden peas

❄️ Storage
Storing - we prefer eating quiche fresh out of the oven, but it can be stored in an airtight container, or covered with plastic wrap and refrigerated for up to 3 days.
Freezing - With a dish like this, I tend to cut it in portions and store it in freezeable lidded containers and separated it where possible. However, with the cooked egg yolks, it never quite tastes as nice as it does freshly baked.
Reheating - If you want to eat the next day, defrost in the fridge if required and microwave until piping hot, or bake while covered with aluminium foil.

- Use fresh eggs to avoid watery egg whites from sprawling everywhere in the dish
🍽️ Serving Suggestions
Potatoes: if not on a low carb diet, enjoy it for lunch with a delicious potato fruit salad, dirty fries, crushed potatoes, or easy hash browns.
Side salad: I always enjoy mine with a side salad for a complete meal with crispy lettuce, cherry tomatoes, fresh onions, and whatever I have in the fridge.
Bread: if eating for breakfast, then buttered wholemeal toast goes great.
Pasta: Additionally, you might prefer a side of cheesy pasta, or a side of cooked wholegrains such as wild rice.

There are a few ways to ensure this dish is Syn Free on a Slimming World plan:
- Using the cheese as part of your Healthy Extra A
- Eat between 4 people
- Use low calorie cooking oil spray, such as Frylight.
- Use fat free natural yogurt
- Mustard powder as opposed to sauce
- Opt for reduced cheese where possible. Many full fat cheeses can be used as a Healthy Extra A, but you can't eat as much
- Remove all visible fat from your bacon.

Crustless Bacon and Egg Pie - Low Carb & Healthy Keto
Equipment
Ingredients
- Frylight
- 1 onion diced *OPTIONAL
- 10 bacon medallions fat trimmed
- 6 eggs
- 80 g lighter mature cheddar cheese grated
- 200 g fat free natural yogurt
- ½ teaspoon mustard powder
- Seasoning
Instructions
- Preheat your oven on 200 degrees.
- Meanwhile, spray a large frying pan with oil spray and cook the bacon and onion if using and set to one side.
- In a separate bowl, mix together the yogurt, two of the eggs, mustard powder, 50g of cheese and seasoning.
- Now spray a 7" quiche dish with frylight and place 3 bacon rashes on the base. Then add some onions if using, a couple of eggs, yogurt mixture.Repeat and finish with covering all the filling with the remaining yogurt mixture, then the remaining cheese.
- Bake in the oven for 20 to 25 minutes until golden.
