Normally, you'll find smoked salmon and broccoli quiche as the ultimate combination in a pastry case. Well, my homemade quiche has none of this.
Instead, I've turned a traditional quiche into a budget-friendly, healthy option that takes a fraction of the time, saves on the pennies and doesn't hold back on flavour.
How? There's no quiche crust to blind bake. I use store cupboard ingredients like sustainable canned salmon with smoky spices. And there's no quiche crust to worry about blind baking.

- Budget friendly - as it uses canned salmon, it's a cheaper store cupboard staple with a longer shelf life. I don't need to make any grocery store shopping trips when I fancy making it
- Perfect for leftovers - if you have leftover pink salmon, or some other vegetables like asparagus or spinach - you can cook and add them to the egg mixture
🛒 Ingredient Notes

Tablespoon butter - this is purely to caramelise the red onions for flavour. I recommend salted butter to ensure the onions soften without burning. Or you can use olive oil or low calorie cooking oil spray like Fry Light
Red onion - this is halved and finely sliced to spread the onions further in the egg and broccoli mixture. You can use green onions, but they have less anti-inflammatory properties
Fresh broccoli florets - these are cut into small pieces no bigger than 1 inch. and blanched in boiling salted water or steamed and drained. Then run under cold water to cool so that they don't prematurely cook the eggs
Eggs - I use large eggs, but you can use small or medium, although it will slightly alter the cook time. Note however, extra large eggs will likely require a larger pie quiche dish than the 24cm (9-10") I use
Natural yogurt - this is a low fat alternative to a double cream mixture (heavy cream) although still high in calcium. You can use fat free natural yogurt, or full fat Greek, etc. Either way, it is still much healthier than eating in pie shells
Cheddar cheese - eating fish with cheese is frowned upon in many countries (depending on the types of cheese). Which is why this recipe only uses a little for fat and flavour
Seasoning - this is a good pinch of salt and black pepper to flavour the egg custard
Herbs and spices - as we're not using smoked salmon fillets, I add smoked paprika and a good pinch of cayenne pepper so it doesn't lack in smoky, warming flavour. I also add dill which compliments my fish quiche
Optional Base
If preferred, you can use a savoury shortcrust pastry for the base as I do in my caramelised onion quiche. My recipe involves rubbing cold butter and flour into fine breadcrumbs in a food processor or with your fingertips.
It also required lining it with greaseproof paper, and pie weights like dry baking beans or raw rice to blind bake first
📋 Instructions
First, preheat oven at 160 c fan, 180c conventional, gas mark 4 or 350 Fahrenheit.

1. Now bring a pan of salted water to the boil.
Add the broccoli florets, cover and cook for 4 minutes.
Then drain in a colander and cool under a running cold tap.

2. Next add the butter to a large frying pan and melt.
Add the onions and a good pinch of salt, then gently saute until softened.
This should take about 8-10 minutes. Then transfer into a cold bowl to cool them quickly

3. Now in a large bowl, whisk the eggs, yogurt, herbs and spices until smooth.
Then stir in the broken salmon, broccoli, cheese and onions.

4. Spray a 24cm or large quiche dish with oil spray, or grease well.
Then pour over the filling in the dish.
Place on a baking sheet and bake for 35-40 minutes or until set and golden brown.
Tip: to speed up cooking the broccoli, you can microwave for 2 minutes with a splash of water. Or you can defrost frozen broccoli.

Depending on your dietary needs, here are a few simple swaps you can make and still result in a delicious quiche:
- Canned salmon - other than swapping for fresh smoked salmon, you can use tinned tuna, canned mackerel, or tofu chopped into bite-sized pieces for vegetarian
- Broccoli - swap for steamed green beans, asparagus or halved new potatoes. Roasted vegetables of your choice. Or add a handful of baby spinach leaves or raw garden peas, sliced tomatoes straight into the creamy filling
- Cheddar - other types of hard cheese work like Gruyère cheese. Or use mozzarella for its mild flavour, and feta or goats cheese for its unique flavour. Or swap for a crustless cheese with cottage cheese.
- Red onion - swap for any raw onions, or even spring onions. Note, traditional French quiches don't include onions, so feel free to leave it out or swap for sauteed mushrooms
- Natural yogurt - swap for double cream for the richest quiche, or choose from sour cream, creme fraiche, whole milk, cream cheese or make a mayonnaise mixture. Note: to make this salmon crustless quiche Slimming World friendly, use fat free yogurt while also swapping butter for FryLight)
- Eggs - for a dairy-free pescatarian quiche with a chickpea batter, or tofu filling and vegan cream and cheese
⚖️ Variations
Here are some different ways you can enhance and make a great recipe your way!
- Deluxe - use fresh smoked salmon if you can and add a teaspoon of dijon mustard, splash of lemon juice
- Spicy - add a pinch of chilli flakes for some heat or slices or red chilli
- Kid friendly - swap for cooked ham or bacon and cheese while serving with French fries and ketchup for a familiar combination

❄️ Storage
Storing - we prefer eating this recipe fresh, but it can be stored in an airtight container or plastic wrap and refrigerated for up to 3 days.
Freezing - cool to room temperature and again, store in a freezer-safe container for up to 3 months.
Reheat quiche - If you want to eat the next day, defrost in the fridge if required and microwave until piping hot, or on the hob or stove.
💡Pro Tips
- To speed up cooking the broccoli, you can microwave for 2 minutes with a splash of water
- Swap fresh broccoli for thawed frozen broccoli as they are more tender than raw broccoli when defrosted and may not require cooking first. (Try the microwave method above!)
- Avoid overcooking as it can turn rubbery due to the low fat content. Remove from the oven when just set in the centre and leave to partially cool for 15-20 minutes on a wire rack
- Don't use a springform pan with removeable base as the cream filling will leak out, unless you are lining it with pie dough
- If you're worried about the top of your quiche cracking under high heat, you can bake the dish in a bain marie. Just place your full tart tin in a larger baking dish with hot water halfway up the sides of the pie plate. This evenly distributes the heat and prevents it from drying out
- Remove any visible bones in your canned salmon, along with the skin and discard. You might want to pat dry salmon chunks with kitchen paper towels if in water to prevent a wet quiche
- If you are worried about your quiche filling overspilling in the oven, place the tart pan or pie dish on top of a baking tray

Potatoes - you can simply enjoy it with homemade French fries, or baked cheesy crushed potatoes
Vegetables - serve it hot with fresh garden peas, steamed asparagus, green beans, etc

Yes, you can swap the cream for whole milk. Although note, it may take longer to bake.
When serving between 6 people, each slice is approximately 182 calories, which is considerably lower than a traditional quiche. If feeding 4 people, this works out at around 273 calories each.
Quiche can last in the refrigerator for up to 3 days. To reheat quiche, simply slice it and place it in a preheated oven at 160 c fan, 180 conventional, gas mark 4 or 350 degrees Fahrenheit for 10-15 minutes, or until it is heated through.

Easy Salmon and Broccoli Quiche Recipe {Crustless}

- 140 g Broccoli florets Chopped into small florets no bigger than 1 inch
- 1 tablespoon Butter
- 1 Red onion Halved and finely sliced

- 250 g Natural yogurt (1 cup)
- ½ teaspoon Salt

- 213 g Canned salmon drained, skinned and last bones removed - Or 120g smoked salmon
- 40 g Cheddar cheese Coarsely grated (⅓ cup)
