This sticky sausage tray bake recipe is such a simple delicious dinner, with LOTS of flavour, and ready for the whole family in 45 minutes. Just bake everything on a large baking sheet, bake and finish with a honey and mustard dressing.

Is there honestly anything better than a whole meal that cooks all together in the same roasting dish?!
All you need to do is chop up some of your favourite vegetables. Then throw them in a pan with any type of sausages and bake in the oven with herbs and spices.
Now, my original recipe ended there. But these days, we've been taking it to the next level, and baking for a final 10-15 minutes with a honey and mustard drizzle for a delicious sticky sausage tray bake.

🛒 Ingredient Notes
Please see the printable recipe card with exact ingredient quantities and preparation instructions at the bottom of this post.

Cooking oil spray - for low calorie, or use olive oil if preferred
Pork sausages - we use reduced-fat sausages, but sometimes use Heck Spring Chicken sausages, chipolatas, vegetarian sausages.
Red onion - for sweetness, or use green onions, peeled & cut into wedges
Bell peppers - such as red, yellow or green for a Mediterranean taste or cherry tomatoes.
Sweet potatoes - or root veg such as carrots. Or try butternut squash. But for a less sweet sausage bake, you might prefer new potatoes.
Seasoning - sea salt and black pepper
Herbs & spices - smoked paprika, sprigs of thyme. or you could use rosemary, Italian seasoning, etc
Garlic clove - (minced) to add a more complex flavour, or leave the garlic skins on, then mash the baked flesh into the honey mustard sauce before drizzling
Lemon juice - drizzled over the ingredients before baking to enhance the flavours and add some acidity. Or hand squeeze lemon wedges if more accessible
Runny honey - or you could use agave, maple syrup, The Skinny Food Co zero calorie golden syrup, etc
Mustard sauce - we use wholegrain mustard for extra texture or dijon
📋 Instructions
First, preheat your oven to 200 c fan, 220 conventional, gas mark 7, 425F.

Now spray your large baking dish with low calorie oil spray, or desired oil.

Add all of the vegetables and spread them into a single layer.
Then add your sausages, smoked paprika and salt and pepper.

Squeeze over the lemon juice and sprinkle on the thyme leaves.
Give the pan a good shake and bake in the oven for 30 minutes.

In a small bowl, mix the honey and mustard together.
Once the cooking time is up, drizzle the dressing on top ad toss well.
Then bake again for 10-15 minutes until golden and sticky.
Tip: Alternatively, if you want a jus, you could add chicken stock instead of honey and mustard.

👩🍳 Substitutions
Depending on your dietary needs, here are a few simple swaps you can make:
- Sausages - swap for other meats, such as meatballs, chicken thighs or even veggie sausages if preferred
- Vegetables - if you're eating for health, try swapping potatoes and peppers for brussels sprouts and broccoli florets to increase your sulforaphane intake and reduce inflammation
- Lemon juice - try apple cider vinegar, red wine vinegar or balsamic vinegar
- Honey - you could swap for red currant jelly or jam. But for an unofficial Slimming World sausage tray bake, try your favourite sugar free syrup or a pinch of sweetener

⚖️ Variations
Here are a few ways you can customise this recipe with different ingredients!
- Spicy - make a red chilli sauce to drizzle for extra heat
- Sunday roast style - swap peppers for carrots, potatoes and stuffing balls. Then swap honey and mustard for beef stock and gravy granules and serve with Yorkshire puddings or toad in the holes
- Deluxe - use the best quality sausages to your budget, or stir in some red wine with balsamic vinegar instead of beef stock
- Cheesy sausage bake - instead of honey and mustard, spoon over this no-cook salsa and a sprinkle of cheese before its final bake
- Kid friendly - if you have picky eaters, why not encourage them to eat their 5 a day by making a sausage and apple traybake recipe by adding apple slices instead of peppers?

❄️ Storage
Storing - we prefer eating a sausage tray bake fresh out of the oven, but it can be stored in an airtight container refrigerated for up to 3 days.
Freezing - cool to room temperature and again, store in a freezer-safe container for up to 3 months.
Reheating - If you want to eat it for lunch the next day, defrost in the fridge if required and reheat it in the oven for 15-20 minutes until piping hot. or simply microwave for a shortcut
💡Pro Tips
- To give all of your ingredients a good coating, try adding all of the raw veg and sausages to a Ziploc bag and shake well - or a large bowl and stir well with a wooden spoon
- For a super easy sausage traybake, line your baking tray with parchment paper so the pan is easier to clean
- If baking with cooked leftover sausage, add them 20-25 minutes after the vegetables have been roasting
- To save time, you could try a bag of pre-chopped casserole vegetables or diced vegetable soup mix
🍽️ Serving Suggestions
Pasta - stir together with some freshly cooked pasta, or have another one pan dish cooking with easy bacon and cheese pasta bake
Potatoes - if you've only added soft vegetables to your traybake, then a side of crushed potatoes, cheesy hasselback potatoes or a fruity potato salad makes it a delicious combo
Salad - this is my favourite way to eat it, served on a bed of baby spinach leaves with diced tomatoes and a drizzle of extra virgin olive oil
Wine - if you're looking for a wine to pair with your sausage traybake, then we recommend a Burgundy Chardonnay, Pino Gris, or a Merlot
❓ FAQ
The skin (sausage casing) that holds the sausage meat together is usually edible when coming from the supermarket.
If you're concerned, a budget way you can make this recipe is to remove the skins and roll them into meatballs and dot them around the pan.

Hey Vikki,
This recipe sounds so good. It's on my menu board for next week. Just a question about the balsmic vinegar. When is that added? You only mention when not to add it. Thanks
