This classic unofficial Slimming World quiche is deliciously cheesy and Syn Free without the unnecessary crust. It also uses part of your allowances and is really easy to make!

I do love a good slice of quiche from time to time. It's great all year round, but I particularly prefer it when the weather starts to pick up.
I can team it with some salad and fill up on some extra veggies as well as a side of low fat chips.
You could also mix it up a bit with slices on tomato layered on top. But add too many vegetables and it can make the texture rather wet, which isn't as graceful.

HOW TO AVOID A WET QUICHE
While following the Slimming World plan, it's recommended to bulk up your plate with a 3rd of certain veggies. But it's only natural to want to add extra in your quiche.
The problem that you may face is a wet quiche. So it's best to add fillings with minimal moisture. Or you could saute such things as onions and mushrooms to remove the moisture.
But as an extra, you could also squeeze and pat dry using kitchen towels if preferred. Another tip is to bake in the middle of the oven as opposed to the top to prevent over browning.

INSTRUCTIONS FOR MAKING LOW FAT QUICHE
Ingredients
- Oil spray
- 6 medium eggs
- 200 g fat free natural yogurt
- 1 red onion diced
- 120 g lower fat cheddar cheese grated
- 6 bacon medallions All fat removed and diced
- Seasoning
STEP BY STEP
Before mixing the quiche mixture, preheat your oven at 160 degrees. Then saute the onions in a frying pan until softened add the diced bacon and fry until golden.

Now crack 6 eggs in to a large mixing bowl.

Whisk well.

Then stir in the fat free natural yogurt.

And now its time to mix in the cheese.

Then repeat with the seasoning and set aside.

Next, spray a 24cm quiche dish with low calorie cooking oil spray. Your dish will need to be at least 1.5 inches high to avoid overspilling as the mixture will rise a bit.

Spread the onions and bacon on the bottom.

Pour the egg mixture on top and smooth with the back of a spoon. Then bake in the middle of the oven for 25 minutes, or 30 until golden.

IS THIS SLIMMING QUICHE HEALTHY?
Traditionally, quiche isn't that healthy as it's typically made with cream, full fat cheese and a buttery pastry base.
However, it can be made by making some simple swaps. For example, here I have made mine crustless, along with using fat free yogurt and oil spray. I have also only used fat trimmed bacon medallions and low fat cheese.
It's also full of protein, giving sustenance on your plate and is around 195 calories per serving. So yes, I would definitely say it is healthy.

CAN YOU FREEZE QUICHE?
Yes, you can freeze your quiche leftovers. I usually store in freezer and oven-proof containers for up to a month. Or leave in the fridge for up to 5 days.
When reheating, I fully defrost, then to avoid browning even more, I place tinfoil and bake for around 20-30 minutes at 160 degrees.
However, I never freeze the entire thing while the eggs are raw to avoid ruining the texture.

Unofficial Slimming World Quiche Lorraine (Crustless)
Ingredients
- oil spray
- 6 eggs

- Next, in a large mixing bowl, crack in the eggs and whisk.
- Stir in the yogurt, cheese and seasoning and set aside.
- Now spray a 24cm quiche dish with oil spray and layer in the onion and bacon.
- Then spoon in the egg and cheese mixture and smooth over with the back of a spoon.
- Place in the middle of the oven for 25-30 minutes until golden and serve.

I make Quiche all the time and it is SO much better than a quiche with a crust.
No soggy bottom loaded with fat, tasted wonderful without feeling I am eating something fatty.

Hi, can I use cream cheese instead of yoghurt?

Hi Carol,
I've not tried with cream cheese, but I have with cottage cheese and it works well.
I can try it for our next quiche, but in the meantime, I'd be tempted to make up a typical 165g tub of Philadelphia up to 200g with milk. So that would be 165g of soft cheese and whisk it with around 35g of milk to thin it out to help the mixture work its way around all of the texture you add while its baking in the oven.
