These healthy oatmeal pancakes are a great low fat snack that can be enjoyed any time of day. (And no, not just for pancake day!)
For a filling breakfast, at the start of the new year, I've been making lots of different pancake recipes as I used to solely make these crepe-style unofficial Slimming World regular pancakes.
But these 3 ingredient oatmeal pancakes {no banana} are even quicker to make and with fat free cottage cheese, it means you're not dipping into both of your healthy extra allowances.

🛒 Main Ingredients
With 3 very simple ingredients, you'll find you don't need much flour for our new favorite breakfast.
And the best part is that this quick breakfast also yields 11 small pancakes! Then once they're topped with a splash of pure maple syrup and blueberries, we think they are the perfect way to start the day!

- Porridge oats - oats make these high protein pancakes than using regular flour (3 grams of protein each). Or instead of quick or rolled oats, you can use pre-milled rolled oat flour.
- Large eggs - this helps loosen the pancake mixture and used as a leavening agent
- Fat Free Cottage cheese - this has small curds which we'll blend in a mini food processor until smooth. Alternatively, it also works with ricotta, sour cream, fat free natural yoghurt or you could make Greek yogurt pancakes.
- Cooking spray - to fry, we used a low calorie cooking oil spray called Frylight, but if you can't find it in your grocery store, you should be ok with just a good non-stick pan
Optional Ingredients
- Baking powder - by adding ½ teaspoon of baking powder, you can have light and fluffy pancakes, but diet plans will require you count it
- Pinch of sea salt - for flavour
- Vanilla extract - I grew up with plain pancakes, but you could add ½ teaspoon of vanilla if desired and/or a pinch of sweetener.
📋 Instructions
Here you can follow my step-by-step instructions to make this delicious cottage cheese pancakes recipe.

Place the oats in a mini blender or food processor and whiz until fine.

Next add the wet ingredients (the cottage cheese and eggs).

Blend until smooth. Note, you may need to scrape the sides.

Spray a non-stick frying pan with low calorie cooking oil spray.

Heat the pan over medium heat and spoon out 2 tablespoon of mixture per pancake and fry for 2-3 minutes or until golden brown.

Before flipping on to the second side, the pancakes should start to bubble and crispy edges start to form.
Tip: A fool proof way I've found while making blender pancakes is to mill the oat flour first before adding the wet ingredients and blending again.

🥞 Substitutions
Here's a few swaps we've tried that you may find useful.
- The non-blender way - alongside store bought oat flour, this delicious breakfast also works perfectly with ricotta instead of blending ½ cup of cottage cheese.
- White flour - it also works with 4 tablespoon of self raising flour for thicker pancakes. It also works with plain/all purpose flour and whole wheat flour
- Gluten-free pancakes - ensure you are using certified gluten free oats
- Keto - if you're looking for low carb pancakes, then why not try almond flour pancakes by swapping the oat flour for ¾ cup/80g of ground almonds

⚖️ Variations
Here are a few ways you can enhance these healthy pancakes how you want them:
- Chocolate lovers - add some chocolate chips to the batter
- Deluxe - you can add ground cinnamon and vanilla extract for an extra delicious recipe!
- Fresh fruit - add fresh berries which have a low glycaemic index such blueberries to the pancake batter
- Kid friendly - add 2 teaspoon of strawberry, banana or chocolate Nesquik powder to quickly add flavour

You don't need lots of equipment to make these healthy cottage cheese pancakes. But the key things I use is as mini food processor attachment which came my stick blender.
- Immersion blender
- Measuring cups
- Frying pan - or griddle
- Spatula
Note, there's no need for a mixing bowl as everything is mixed in the blender!

❄️ Storage
Fridge: To store leftovers, we place them in an airtight container for up to 3 days in the fridge.
Freezer: Alternatively, you can let any leftover pancakes cool down to room temperature, and place pieces of parchment paper (wax paper) between each one.
Then store them in a freezer bag or ziplock bag, and freeze for up to 3 months.
Reheating: They can be reheated in a toaster oven, under a grill or on a baking sheet at 200 degrees. And although a microwave is quicker, it's our least favourite way as they result in soggy pancakes!
💡 Top Tip
If you don't have a high speed blender or mini food processor to make this cottage cheese pancake recipe, then I recommend milling the dry ingredients first before blending in the wet ingredients.

Yes, full-fat cottage cheese works great, but remember, fat free cottage cheese is usually an ingredient that doesn't need counting which is why we used it.
If you're not on a low fat diet, you can use coconut oil, olive oil or melted butter to fry your pancakes.
Yes, just swap the cottage cheese for ½ cup of milk and use 1 egg instead of 2 as seen in my traditional pancake recipe.
To make 4 ingredient protein pancakes, you can add 1 tablespoon of smooth peanut butter
If you want to get some meal prep done in advance, then you're in luck as pancake batter is great for freezing! I store in an airtight container for up to 3 months.
If you find your batter is thicker after defrosting, just loosen it up with a tablespoon of milk as oat flour is very absorbent.

Syn Free 3 Ingredient Cottage Cheese Pancakes
Ingredients
- 40 g oats Quick cook (⅓ cup & ½ tbsp)
- 2 Large Eggs
- 130 g cottage cheese Fat Free (½ cup)
Instructions
- In a mini food processor, blitz the oats to a fine powder.
- Add the eggs and cottage cheese and blend until smooth.Note: Blitzing all at once runs the risk of the oats not milling well and creates an inconsistent pancake texture
- Spray a large frying pan with cooking oil spray and heat up.
- Pour 2 tablespoon of pancake mixture per pancake and cook on each side for 2-3 minutes.
- Turn onto a plate and top with your favourite toppings.
